Adolescents have increased nutrition needs and report frequent meal skipping and snacking, but there are few studies that examine the determinants of unhealthy eating, especially among ethnic minority groups. This study investigated dietary intake and snacking behavior among Korean-American adolescents in the Los Angeles area. We determined the relationship between dietary fat intake and overall quality of the diet as assessed by two healthy eating indices: the Healthy Eating Index (HEl) and Mean Nutrient Adequacy Ratio (MNAR). A patient’s adherence to self-management therapies in diabetes strongly influences health outcomes, health care utilization, and ultimately health care costs. Engaging in regular exercise therapy reduces risk factors associated with type 2 diabetes. The purpose of this randomized prospective study was to determine if a client-centered approach (CCA) toward diabetes education, verses a traditional-directive approach (TDA), would improve exercise participation, perceived control, intention to exercise, and glycemic control in patients with type 2 diabetes.

A total of 756 female adolescents, aged 13 to 18 years, from five public high schools in Antelope Valley Union High School District located in North Los Angeles County participated in this study between February 1999 and March 1999. The ethnic composition was 53.3% White/Anglo Americans, 19.3% Hispanics or Latinos and 10.2% Black/African Americans. The constructs of the Theory of Planned Behavior (attitude, subjective norm, and perceived behavioral control and their underlying beliefs) were assessed to determine the predictors of low-fat milk and regular soda consumption. A cross-sectional design with group-administered questionnaires was utilized.

Repatriation has compromised the opportunity to directly examine skeletons and to apply new diagnostic criteria and techniques. Pre-repatriation approaches to non-metric data acquisition, must make a number of assumptions: ( I ) Phenomena must be correctly identitied and segregated; (2) Criteria for severity must be specific to the phenomena studied; and (3) As criteria for disease rewgnition may change with time, it is valuable only as long as the raw data is also recorded. Paieoparasitology has advance during the past decade to the status of a statistically based science focused on problems of disease ecology and geographic distribution of parasitism. For most of its development, paleoparasitology has focused on the analysis of coprolites and latrine sediments. During the past few years, mummies have been increasingly included in paleoparasitology studies. We evaluate in this paper the interpretive value of mummies relative to other sources of paleoparasitological data.

The field devoted to the identification of parasite remains in the archaeological record and the reconstruction of past human-parasite interactions. Parasitic disease has always been a major problem. Recent summaries of the prevalence of parasitic diseases in the world today show that there are 4.5 billion infections with all species of parasitic worm, 1 billion infections with giant intestinal roundworm (Ascaris lumbricoides), 750,000,000 infections with whipworms (Trichuris trichiura), 900,000,000 infections with hookworm (Ancylostoma duodenale and Necator americanus), 657,000,000 infections with filarial worms, 200,000,000 with blood flukes (schistosome species), and 489,000,000 infections with malaria. Although archaeological fieldwork is hot and dirty, the most “earthy” side of the discipline is the laboratory analysis of coprolites. Each coprolite contains the remains of one to several actual meals eaten in prehistory, and analysis of many coprolites provides a picture of ancient diet that is unique in accuracy.

The term coprolite originally referred to fossilized feces in paleontological context. In archaeology, the term broadened to refer to any formed fecal mass, including mineralized, desiccated, or frozen feces and even the intestinal contents of mummies. An emerging field devoted to the exploration of the archaeological record for evidence of medicinal plants.

In the future, archaeology will have a role in pharmaceutical research. In the late twentieth century, much of the world’s pharmaceutical research has been based on ethnographic documentation of tribally recognized medicinal plants. Once the active chemical compounds in the plants are identified, they are either extracted or synthesized for commercial use. The American film Medicine Man depicts this approach. Natural autoantibodies (NAA} are autoantibodies that are present in the sera of healthy individuals. NAA can belong to the lgA, lgG and lgM isotypcs. They exhibit high degrees of polyreactivity and connectivity but low affinity to self antigens. The main function of NAA in healthy people is probably 10 clear the catabolic waste and ageing cells. Nitrous oxide is a gas often used in dental, surgical and veterinary operations as an anesthetic agent. Employees stationed in proximity of fugitive gas emissions may potentially suffer adverse health effects from chronic exposure to this agent. Passive dosimeters can be worn in the breathing zone of potentially affected personnel during exposure periods, then later analyzed to quantify nitrous oxide exposure. This study sought to establish the accuracy of several commercially available passive monitoring devices for nitrous oxide by comparison against an infra-red spectrophotometric reference method.

During the summer and early fall of 1998, 34 estuarine stations in Virginia were sampled for Pfiesteria like organisms (PLOs) and associated water quality conditions. Stations were sampled either bimonthly (20 stations) or monthly (14 stations) from June to October 1998. At each station, a set of live and Lugol' s preserved samples were collected for presumptive counts of PLOs and water quality conditions were determined. Water quality parame­ters measured included standard field parameters, nutrients (total, dissolved, and particulate), chlorophyll a, and conventional water quality indicators. Mummification was not intentional for most North American prehistoric cultures. Natural mummification occurred in the dry areas of North America, where mummies have been recovered from rock shelters, caves, and overhangs. In these places, corpses desiccated and spontaneously mummified. In North America, mummies are recovered from four main regions: the southern and southwestern United States, the Aleutian Islands, and the Ozark Mountains of Arkansas. This chapter is limited to a discussion of burial practices and a tabulation of the location of mummies in the southwestern United States with some comments on mummies of the southern United States, including the Ozarks.

Recent research demonstrates that silica phytoliths of dietary origin are associated with microwear of human teeth. Previous research has shown that severe enamel microwear and dental wear characterizes Archaic hunter-gatherers in the lower Pecos region of west Texas. Calcium oxalate crystals are especially common in Archaic coprolites. The vast majority are derived from prickly pear and agave, which were the dietary staples in west Texas for 6,000 years. The calcium oxalate phytoliths are harder than enamel. We report the results of molecular analysis of 39 isolates of Cryptosporidium parvum from human and bovine sources in nine human outbreaks and from bovine sources from a wide geographic distribution. All 39 isolates could be divided into either of two genotypes, on the basis of genetic polymorphism observed at the thrombospondin-related adhesion protein (TRAP-C2) locus. Genotype 1 was observed only in isolates from humans. Genotype 2, however, was seen in calf isolates and in isolates from a subset of human patients who reported direct exposure to infected cattle or consumed items thought to be contaminated with cattle feces. Emergence of pathogenic organisms continues as a threat to overall biodiversity and genetic resources. Macroparasites including helminths constitute a potential threat to economically important resources in agriculture and conservation biology. Limitation of this threat can be achieved through survey and inventory for biodiversity and the application of systematics to understand the host range , biogeography and history of faunas. A limited number of studies have been conducted to assess the perceptions of risk of medical students and residents for acquiring Human Immunodeficiency Virus (HIV) or Hepatitis B Virus (HBV) via percutaneous (needlestick) injuries while performing clinical training. The purpose of this study is to investigate these perceptions of risk, and to determine whether there is an association between a high perception of risk and a low incidence of needlestick injury. Endothelial dysfunction has been found prior to any signs of atherosclerotic plaque formation in patients with a variety of risk factors for atherosclerosis. Elevated serum cholesterol has repeatedly been associated with endothelial dysfunction as demonstrated by impaired vasoreactivity to vasodilating stimuli.

The aim of this research was to determine whether short term lowering of serum cholesterol levels by life style changes or by cholesterol lowering medication could reverse or reduce the endothelial dysfunction. The brachial artery diameter was measured by high-resolution ultrasound at rest and during reactive hyperemia pre and postintervention. Studies show that numerous and complex variables influence pregnancy outcomes and infant mortality rates. These variables include demographic, medical, physical, environmental, behavioral, and attitudinal factors and prenatal care. Improving the health of mothers and infants is a national challenge. In 1987, more than 3.8 million infants were born in the United States. Of these, 38,408 died before their first birthday. Although the infant mortality rate is at an all-time low, the pace of progress has slowed. The purpose of this study was to determine if the analytical results (when determining cadmium, lead, and zinc concentrations) for air sample filters prepared and analyzed according to N:OSH Method 7300, differ significantly, from those obtained when the instrument is calibrated using EPA Method 200.7 acid matrix standards. The null hypothesis was that no statistically significant difference, measured at the 95% confidence level, would exist between results obtained from the two calibration standards. Dietary habits are believed to be major determinants of risk of coronary heart disease (CHD). Studies of high and low risk populations have suggested several nutrients to be protective or hazardous against CHD. Most published work since 1984 on diet and CHD in the Adventist Health Study (AHS) population examined either foods or food groups. This study investigated ten nutrients as exposure variables and their relationship to CHD risk. A cohort of 23,616 nonsmoking, non-Hispanic white California Seventh-day Adventists was followed for six years beginning in 1976. A cache of hermetically sealed ceramic jars found in the Lower Colorado Desert was examined using chronometric dating, pollen and macrofossil extraction, design analysis, and water retention experimentation. The cache apparently dates to the protohistoricfifteenth through seventeenth centuries. Findings from these studies contribute to knowledge in four problem areas: (1) ceramic jar function and use-history; (2) storage technology and caching behavior; (3) ceramic dating and chronology; and (4) symbolic iconography.
