Nutrition Able: A Lecture-Based Intervention To Promote Nutritional Literacy About Protein Intake In Women, Jeffery Bolte, Alejandra Garcia, Jacob Abalos, Jakson Johnson, Alex Joyce, Christopher Hinds, Jared Tuttle, Jeff Svec
International Journal of Exercise Science: Conference Proceedings
Sport performance is influenced by sport-specific requirements for body composition. One major predictor of body composition is protein intake. Higher protein intake tends to cause leaner body composition relative to lower protein intake, especially during caloric deficit. In Bexar County, ~72% of the adult population is overweight/obese and 15.5% are diabetic. This suggests that high protein diet could be a high leverage option in the San Antonio population for optimizing body composition for sport performance. Furthermore, late life sporting activity and protein intake is a primary method for mitigating sarcopenia, osteoporosis, fractures, and accidental death in post-menopausal women. PURPOSE: …

Postprandial And Fasting Lipopolysaccharide Levels In Healthy Hispanic Residents Of Southeast Texas With Positive Family History Of Type 2 Diabetes, Amanda J. Wheeler, Yu Lun Tai, Smaran Marupudi, Ryan D. Russell
International Journal of Exercise Science: Conference Proceedings
PURPOSE: Healthy people with a family history (FH+) of type 2 diabetes (T2D) display impaired metabolic and microvascular function prior to glucose intolerance, and are at greater risk for developing T2D. While mechanisms to explain this disparity are lacking, it is possible that intestinal permeability plays a role, as it is also linked with insulin resistance, glucose intolerance, and chronic inflammation. Lipopolysaccharides (LPS) act as an outer membrane component of gram-negative bacteria in intestines and play a role in inflammation and chronic disease when in circulation, thus serving as a surrogate measure of intestinal permeability. However, the link between FH+ …

Hispanic adults are 70 percent more likely than non-Hispanic white adults to be diagnosed with diabetes by a physician. In 2017, Hispanics were twice as likely to be hospitalized for treatment of end-stage renal disease related to diabetes, as compared to non-Hispanic whites. In 2018, Hispanics were 1.3 times more likely than non-Hispanic whites to die from diabetes. Lack of readily accessible educational material in different languages can lead to educational deficits in non-English speaking patients.

Improving Retinopathy Screening For Patients With Diabetes: Optometrists Accepting New Patients On Medicaid +/- Interpreter Services, Kassondra M. Little
Family Medicine Clerkship Student Projects
For patients with diabetes, screening for microvascular complications like retinopathy requires annual retinal photography or dilated fundoscopy to identify and mitigate processes that can cause preventable blindness. Yet, by measures at the state and federal level, the percent of patients achieving this care is below target. At the Community Health Centers of Burlington (CHCB), the barriers responsible for this include uncertainty among patients and providers about which local optometry offices accept Medicaid, are scheduling new patients and have interpreter services available. This project aimed to improve retinopathy counseling, the achievement of retinopathy screening and the time burden placed on providers …

International Journal of Exercise Science: Conference Proceedings
ABSTRACT Type 2 Diabetes (T2D) has several comorbidities such as cardiovascular disease, elevated lipid profile, microvascular complications, and impaired metabolic flexibility (MF: the ability to switch substrate use upon stimulation). Further, healthy Caucasians with a family history of T2D (FH+) have impaired MF similar to T2D, suggesting impaired MF could be an early-detection tool to identify at-risk populations. Hispanics of the Rio Grande Valley have ~3x the T2D rates as the US average, and have ~79% of the people in this region are either overweight or obese. However, patterns of MF in this population have not been addressed. Purpose: The …
