Effect Of Nutrition Education On Food And Beverage Choices Of Adolescent Female Dancers, Marie Ann Williams

Lifestyle choices affect the risk of obesity and ill-health among youth. This study determined whether providing nutrition education to adolescent females enrolled in dance classes influenced their beverage and food choices. It was hypothesized that providing six 10-minute nutrition education sessions for three weeks to adolescent dancers would increase their healthy beverage and food choices. Sixteen girls (12-18 years), from two dance studios in Kingsport, Tennessee, completed this pre-test/post-test study. After nutrition education, soda consumption reduced by 7.7%; sugar sweetened beverages (excluding sodas) reduced by 23%; intakes of fruits and vegetables were enhanced by 5.6% and 21%, respectively. Background: Vitamin D insufficiency and deficiency have been documented throughout the world, correlating with disease processes including: cancers, bone disorders, autoimmune diseases, and cardiovascular disease. Factors affecting people of Southwest Alaska, such as northern latitude (above 34ºN), low dietary intake of vitamin D, reduced sun exposure, high body mass index, and darker skin pigmentation increase risk for Serum 25-hydroxyvitamin D [25(OH)D] deficiency and insufficiency.

Purposes of the Study: To evaluate the incidence of 25(OH)D insufficiency and deficiency in Southwest Alaska, differences in deficiency rates between Alaska Natives and non-Natives, and seasonal trends in 25(OH)D levels.

Children with developing nervous systems might be at greater risk for any potential neurobehavioral effects of color additives widespread in many foods. This study thus examined whether children consumed foods containing color additives more frequently than adults. Twenty-one adults (aged 18-60) and parents of 14 children (aged 4-7) with regular eating patterns kept detailed food records for five days. Diets were analyzed for foods containing the dyes Red #3, Red #40, Yellow #5, Yellow #6, Blue #1, Blue #2 and Green #3 by comparing ingredient labels found in grocery stores and online. Background: While nursing homes in Oklahoma are required to utilize a Registered Dietitian (RD) or Qualified Nutritionist, there are no specifications for minimum utilization. Objectives: Investigate how Oklahoma nursing homes determine RD utilization and whether a relationship exists between resident census and RD availability. Design: Questionnaires focused on RD work patterns were sent to 150 Oklahoma nursing homes.

Results: Nursing homes with a resident census of 50, 51-100, and 101 employed a RD for approximately 7. 9, 7.3, and 56.3 hours/month, respectively. The RD is the primary decision maker in determining hours worked, followed closely by corporate staff and governmental …

Whole grains play a cost-effective role in the treatment and prevention of type 2 diabetes, yet consumption remains well below recommendations. This pilot study showed that nonfamilial environmental factors have a strong influence on whole grain consumption among type 2 diabetics of German descent. Dietary records and grain questionnaires were used to probe subjects’ knowledge of the benefits of whole grains, reasons for grain preferences, and actual consumption. For this population (n=18), mean whole grain consumption ( = 48±30 g/d = 3±2 servings/d) was much higher than the national average (μ ≤ 1 serving/d). The objective of this study was to explore the impact of nutrition education on the nutritional intake of female high school students. Two groups of females from Saline High School (Saline, Michigan) participated in the study. Age, height, weight, and activity level were obtained from each student in the control group (N=5) and the experimental group (N=17). Participants also completed a demographic survey and a 3-day food diary (two weekdays and one weekend day). Studies showing lower body mass index for vegetarians than non-vegetarians suggest that a vegetarian diet may be an approach for weight management. The purpose of this study was to compare nutrient intakes of vegetarians, non-vegetarians, and dieters to show that a vegetarian diet does not compromise nutrient intake. National Health and Nutrition Examination Survey (1999-2004) data were analyzed for persons 19 years of age and older. Vegetarians were those who did not report eating meat, poultry, or fish. Dieters were those who consumed 500 kilocalories less than estimated energy requirements. Adjusted means for fiber, vitamins E, A, and C, thiamin, …

The purpose of this study was to determine if what the 3rd, 4th, and 5th grade children (n=36) at Central Valley Christian Academy (CVCA) were eating for lunch followed the beliefs of the Seventh-day Adventist (SDA) church and if lunches brought from home (LFH) provided more nutritional quality than combination lunches.

This study showed that LFH (n=26) provided more overall nutrients for the students when compared with school-provided entrée lunches (n=1) and combination lunches (n=9). When comparing LFH with combination lunches, LFH met more of the nutritional requirements based on the Recommended Dietary Intake (RDI) and the Dietary Guidelines for …
