What we eat is rapidly becoming an issue of global concern. With food shortages, the rise in chronic disease, and global warming, the impact of our dietary choices seems more relevant today than ever. Globally, a transition is taking place toward greater consumption of foods of animal origin, in lieu of plantbased diets. With this transition comes intensification of animal agriculture that in turn is associated with the emergence of zoonotic infectious diseases, environmental degradation, and the epidemics of chronic disease and obesity. Health professionals should be aware of these trends and consider them as they promote healthier and more …

Nutrition Care Manual, Carolyn Schubert, Amanda Hedrick

Developed by the Academy of Nutrition and Dietetics, Nutrition Care Manual serves as an evidence-based, point-of-care tool for students, educators, and professionals. The content covers the most common nutrition issues, professional background information, treatment plans, and patient education information. However, the user interface is confusing with few paths for logical search or navigation and lacks many of the common features users expect from most electronic resources, such as permalinks or mobile viewing. While the content and flexibility meet a previously unfulfilled need in allied health resources, the interface problems hinder maximum utilization of the content quickly.

The Vitamin D Status Of Prison Inmates, Benjamin U. Nwosu, Louise Maranda, Rosalie Berry, Barbara Colocino, Carlos D. Flores, Kerry Folkman, Thomas Groblewski, Patricia Ruze
Benjamin U. Nwosu
INTRODUCTION: There is no comprehensive, systematic analysis of the vitamin D status of prisoners in the scientific literature.
OBJECTIVE: To investigate the vitamin D status and its determinants in US prison inmates.
HYPOTHESIS: Given the uniformity of dietary intake amongst inmates, vitamin D status will be determined by non-dietary factors such as skin pigmentation, security level-, and the duration of incarceration.
SUBJECTS AND METHODS: A retrospective study of 526 inmates (males, n = 502, age 48.6±12.5 years; females, n = 24, age 44.1±12.2) in Massachusetts prisons. Vitamin D sufficiency, insufficiency, and deficiency were respectively defined as a 25(OH)D concentration 75 …

Alberto Coustasse
The purpose of the study was to determine the association of birth weight as a risk factor for obesity at first grade in a cohort of elementary school Chilean children. Height and weight at birth and follow up measurements at first grade were analyzed from a national cohort of 119,070 new borns. Subjects were classified by anthropometric characteristics: new born weight in kilograms, Ponderal Index, (birth weight/height3 x 100), and gestational age (physical maturity) categories at birth. The study tested the hypothesis that a macrocosomic newborn (4,000 g or > 8.8 pounds) or Large for Gestational Age , would be …

With the recent cut in the Supplemental Nutrition Assistance Program (SNAP) funding, food availability in low income households may not meet family needs. In addition, neighborhoods in low-income urban areas generally have fewer quality, low-cost food outlets in which to spend their limited food dollars. These facts help answer the paradox of how can hungry kids be overweight? This presentation explores the bio-social-pycho aspects of hunger and obesity in America.

Accessibility And Preferred Use Of Online Web Applications Among Wic Participants With Internet Access, Robert Bensley
Robert J Bensley
Objective: This study examined the current technology use of clients in the western Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) region and the preferences these current clients have for using new technologies to interact with WIC.
Methods: Cross-sectional convenience sample for online survey of WIC clients over 2 months in 2011.
Results: A weighted sample of 8,144 participants showed that the majority of WIC clients have access to the Internet using a computer or mobile phone. E-mail, texting, and Facebook are technologies most often used for communication. Significant differences (P < .05) existed between age groups and Facebook use, education level and technology use for education delivery, and education level and use of video chat.
Conclusions and Implications: Technologies should be considered …
