College students of health-related majors are sometimes assumed to have greater health literacy. The belief can be attributed to the students taking classes discussing health problems, diseases, risk factors, medical management, nutrition, and exercise. How often the health classes discuss type 2 diabetes (T2D) remains undetermined; therefore, the amount of knowledge and beliefs health students have of T2D is unknown. The prevalence of kudzu has risen in the United States since its introduction in 1876. Though its invasiveness may play a negative role in our ecosystems, its roots have been used nutritionally in China for over 2,000 years because of their high starch content. In the United States, the use of kudzu starch as food products is limited. Kudzu, also known as kuzu, is a rapidly growing, vine invasive in the Southeastern United States following introduction for soil erosion control in the late 19th century. Native to Southeastern Asia, its roots are rich in starch which has been used in traditional Eastern cuisine as a sauce thickener. Use of kudzu starch in Western cuisine is limited. The Mediterranean Diet, which is rich in complex carbohydrates and plant-based foods, may be beneficial to athletic performance. To date, no one has examined adherence of collegiate athletes to a Mediterranean Diet. This study compared how closely collegiate, recreational/intramural, and non-athletes in college followed a Mediterranean Diet. Surveys and validated Mediterranean Diet score questionnaires were completed by 933 undergraduates in HLTH 1520: Healthful Living at Georgia Southern University. Participants self-reported following various diets including decreased or increased carbohydrate, increased protein, and increased water intake. Adhering to a healthy eating plan has been a topic of discussion across World regions. Moreover, Americans often attempt to mimic the eating habits of other regions of the world, such as the Mediterranean or Eastern Asia, in an attempt to live a long and healthy life. Satia et al., (2000) suggest that healthy eating perceptions can be influenced by food and beverage exposure, family norms, preparation methods, and geographic locations.
