How Do Food Shopping Behaviors Differ Between High-Income And Low-Income Shoppers In The Grand Rapids Metropolitan Area?, Alison M. Cooney
Masters Theses
Background: The social determinants of health and health equity are influenced by access, environment, and socioeconomic status (SES). Health inequities are preventable and can be avoided with systemic policy change surrounding the distribution of wealth and resources. Objective: The purpose of this study was to investigate the differences in food shopping behaviors between high-income and low-income shoppers living in the same zip code. Subjects Sixty-eight individuals who live in the 49341 zip code which represents a small city in Kent County, …
Social Consequences Of Obesity: Case Study Of Bariatric Population At Ellis Hospital, Kara Leyden
Social Consequences Of Obesity: Case Study Of Bariatric Population At Ellis Hospital, Kara Leyden
Honors Theses
Despite the fact that the majority of adults living in the United States are overweight or obese, obesity remains a highly stigmatized physical condition. Society often sees obesity as a physical manifestation of personal faults such as the lack of self-control and laziness. Obese individuals thus experience discrimination in places of employment, have lower educational attainment, are underrepresented in popular culture, and often have difficulty finding and sustaining intimate relationships. For individuals with extreme obesity (BMI greater than 40), bariatric surgery is the most effective strategy to improve health and lose weight. Individuals who have undergone bariatric surgery typically experience …

The novel coronavirus (COVID-19) pandemic has affected people worldwide, disrupting food access, and security. To understand how food systems and security are impacted during this pandemic, an online survey was launched in Vermont from March 29 - April 12, 2020 (less than a week after the “Stay Home/Stay Safe” order). A total of 3,219 Vermonters responded with 182 providing a written answer specifically about food pantries and 828 of the respondents providing written comments to the open-ended question at the end of the survey. This brief summarizes survey findings and respondent comments about experiences with two programs during the early …

Relationship Satisfaction & Diet: Exploring The Mechanisms Through Which Intimate Relationships Influence Physical Health, Lindsey Robinson, Dylan Hillock, Dr. Josh Novak
Relationship Satisfaction & Diet: Exploring The Mechanisms Through Which Intimate Relationships Influence Physical Health, Lindsey Robinson, Dylan Hillock, Dr. Josh Novak
Southeastern Council on Family Relations Conference
Understanding how intimate relationships influence physical health has been an important topic of focus; however, research remains unclear on the mechanisms through which this influence occurs. The purpose of this study was to examine how relationship satisfaction relates to diet quality, through mental health (depression and anxiety) and diet self-efficacy. Using a dyadic mediation model with a sample of 234 heterosexual couples, researchers found that women's higher relationship satisfaction was associated with better diet through lower depression and higher diet self-efficacy. Results revealed the same association between women's relationship satisfaction and diet through lower anxiety. Interestingly, rather than mediation through …
Healthy Lifestyles Community Readiness Assessment: Co-Creating Initiatives With Communities And Examining Differences In Sectors And Demographic Characteristics Across Dimensions, Brenna Schmader
Honors Theses
Nebraska Extension identified a need to better understand community readiness to engage communities and meet their needs. An interdisciplinary team of Extension Educators and Specialists was developed from the Community Vitality Initiative and the Food, Nutrition, and Health team. Six dimensions were identified as contributing factors for healthful communities and were the basis for the Healthy Lifestyles Community Readiness Assessment (HLCRA): Leadership Energy; Issue Awareness; Participation; Inclusivity; Resources; and Entrepreneurial Activities.
The assessment helps determine: a) programming type needed and b) who Extension can connect with in the community to enhance program success. The assessment was piloted by trained staff …

Student Scholarship – Family and Consumer Science
Learning Outcome
To understand the impact sports nutrition knowledge has on the risk for developing LEA in Female Cross Country Runners.
Background
The International Olympic Committee introduced the concept of Relative Energy Deficiency in Sports (RED-S) to accurately encompass the condition previously known as the Female Athlete Triad. LEA is the root cause of RED-S. (Mountjoy et al., 2014). The purpose of this study was to measure sports nutrition knowledge and the impact knowledge level has on the susceptibility to develop LEA in female cross country runners.
Methods
A quantitative design was used. Participants included the women’s cross country team …
