Glucagon-Like Peptide-1ra As A Public Health Interventions, Briana Sepeda
Electronic Theses, Projects, and Dissertations
Glucagon-like peptide receptor agonist (GLP-1RA) medications have become a prominent topic of interest both in clinical medicine and broader societal discussions. Although the medication are relatively new and expensive, ongoing research continues to explore pharmacologic modifications aimed at improving therapeutic effectiveness and prolonged drug half-life. GLP-1RAs have gained significant traction due to their ability to lower glycosylated hemoglobin (A1c) and blood glucose levels in individuals who have been diagnosed with type 2 diabetes (T2D). In addition to glycemic control, evidence suggests its associations with appetite suppression, weight loss, reducing cardiovascular disease, improved renal dysfunction, neuroprotective effects related to neurodegenerative disease …

Vitamin B12 Deficiency: Confidence, Perspectives, And Practices Among Registered Dietitian Nutritionists, Avery Miller Adams
Vitamin B12 Deficiency: Confidence, Perspectives, And Practices Among Registered Dietitian Nutritionists, Avery Miller Adams
Master's Theses
Vitamin B12 deficiency is common in the United States, occurring in 20% of adults aged 60 and above (Andres et al., 2004). Veterans are susceptible to B12 deficiency due to tobacco product usage, alcohol consumption, and poor diet quality. Megaloblastic anemia is the second most prevalent vitamin deficiency disorder recorded in military personnel from 1997 to 2015 (Knapik et al., 2021). This exploratory, analytic research aims to assess registered dietitian RDN nutritionists’ (RDN) knowledge, perceptions, and intentions regarding treating vitamin B12 deficiency in a clinical setting. Due to population prevalence differences, responses from VA and non-VA practicing registered dietitian-nutritionists (RDNs) …

Impact Of Water Quality On The Nutritional And Phytochemical Properties Of Culinary Herbs, Genesis Arroyo
Impact Of Water Quality On The Nutritional And Phytochemical Properties Of Culinary Herbs, Genesis Arroyo
Electronic Theses, Projects, and Dissertations
Water quality significantly affected food safety, especially since contaminated water impacted crop growth and the nutrient composition of foods. Nitrates occur naturally in vegetables. However, when introduced into the food supply through water contamination, excessive levels disrupted the natural physiological processes of vegetables and other agricultural plants. These excessive levels eventually led to nutrient imbalances, decreased phytochemical concentrations, and potential health risks such as the formation of carcinogenic N-nitroso compounds in humans. This study evaluated the effects of nitrates on the nutritional outcomes of food crops, focusing on commonly used culinary herbs. While synthesizing findings from relevant peer-reviewed articles, I …

Strategies For Optimizing Female Athlete Health: A Multidisciplinary Approach To Mitigate Stress Fractures And Minimize Missed Participation In Collegiate Sports, Natalie B. Allen, Melissa R. Penkalski, Shannon M. Hauschildt, Kristin A. Paloncy-Patel

Background: If not recognized early, low energy availability, along with overtraining, may result in stress fractures and significant time lost from sports participation for athletes at any level. Objective/Aim: The multidisciplinary collegiate medical team plays a key role in early identification of Female Athlete Triad (Triad) and Relative Energy Density in Sport (RED-S). To help with early identification, which may in turn lead to fewer stress fractures and less time missed from sports participation, this study’s objective was to implement the use of the 2014 Female Athlete Triad Cumulative Risk Assessment (FACTRA) and test early identification. The first …

BACKGROUND: To improve the healthfulness of foods offered while accelerating the use of environmental sustainability practices, it is important to engage hospital food service operators in the adoption of such practices. The purpose of this study was to explore barriers, facilitators and best practices for implementing environmental sustainability standards in food service among veterans affairs (VA) hospitals in the United States.
METHODS: We conducted an online survey with 14 VA hospital food service directors and then 11 qualitative interviews. The survey assessed motivations for initiating sustainability standards and included a self-rating of implementation for each of five standards: increasing plant-forward …
