Research outputs 2022 to 2026
Unhealthy food marketing is contributing to the obesity epidemic, but real-time insights into the mechanisms of this relationship are under-studied. Digital marketing is growing and following food and beverage (F&B) brands on social media is common, but measurement of exposure and impact of such marketing presents novel challenges. Thus, this study aimed to evaluate the feasibility of collecting data on exposure and impact of digital F&B marketing (DFM) using a smartphone-based ecological momentary assessment (EMA) methodology. We hypothesized that DFM-induced food cravings would vary based on whether (or not) participants engaged with F&B brands online. Participants were Singapore residents (n …

The Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) is a nutrition assistance program in the United States (U.S.). Participants in the program redeem their prescribed food benefits in WIC-authorized grocery stores. Online ordering is an innovative method being pilot-tested in some stores to facilitate WIC participants' food benefit redemption, which has become especially important in the COVID-19 pandemic. The present research aimed to examine the online ordering (OO) behaviors among 726 WIC households who adopted WIC OO in a grocery chain, XYZ (anonymous) store, in Oklahoma (OK). These households represented approximately 5% of WIC households who redeemed …

© 2020 by the authors. Festivals are experiential products heavily depending on the recommendations of previous visitors. With the power of social media growing, understanding the antecedents of positive electronic word-of-mouth (eWOM) intentions of festival attendees is immensely beneficial for festival organizers to better promote their festivals and control negative publicity. However, there is still limited research regarding eWOM intentions in the festival context. Thus, this study aims to fill such a gap by investigating the relationships among festival attendees' enjoyment seeking motivation, perceived value, visitor satisfaction, and eWOM intention in a local festival setting. Additionally, the moderating role of …
The Impact Of Sports Nutrition Knowledge On The Physical Effects Of Low Energy Availability In Female Cross Country Runners., Abby Olcott, Catherine Anstrom
The Impact Of Sports Nutrition Knowledge On The Physical Effects Of Low Energy Availability In Female Cross Country Runners., Abby Olcott, Catherine Anstrom
Student Scholarship – Family and Consumer Science
Learning Outcome
To understand the impact sports nutrition knowledge has on the risk for developing LEA in Female Cross Country Runners.
Background
The International Olympic Committee introduced the concept of Relative Energy Deficiency in Sports (RED-S) to accurately encompass the condition previously known as the Female Athlete Triad. LEA is the root cause of RED-S. (Mountjoy et al., 2014). The purpose of this study was to measure sports nutrition knowledge and the impact knowledge level has on the susceptibility to develop LEA in female cross country runners.
Methods
A quantitative design was used. Participants included the women’s cross country team …

Introduction
Obesity rates in Appalachia are among the highest in the United States, and knowledge of upstream approaches to decrease prevalence among this vulnerable population is limited. The primary aim of this study was to examine the association between healthy, diet-based, social marketing interventions in grocery stores and frequency of fruit and vegetable intake.
Methods
A social marketing campaign was conducted among 17 grocery stores (N = 240 participant surveys) over 4 months in 5 rural Kentucky counties. Interventions included providing food samples, recipe cards, and promotional discounts on fruits and vegetables and moving high-calorie foods to side aisles.
Results …

Availability of farmers markets may increase fruit and vegetable consumption among rural residents of the United States. We conducted a community-based marketing campaign, Plate it Up Kentucky Proud (PIUKP), in 6 rural communities over 2 years to determine the association between exposure to the campaign and fruit and vegetable purchases, adjusted for Supplemental Nutrition Assistance Program recipient status. Logistic regression was used to examine the odds of the PIUKP campaign influencing purchases. Awareness of the PIUKP marketing campaign was significantly associated with a willingness to prepare fruits and vegetables at home. Using marketing strategies at farmers markets may be an …

In 2010, President Obama signed the Healthy Hunger Free Kids Act, establishing a monetary incentive for schools that served meals following a more rigorous nutritional requirement than standard guidelines. This act is a step in the right direction towards placing more importance on school lunches, however America’s lunchroom practices continue to be environmentally unsustainable, and students absorb this message. The production and transportation of processed cafeteria food contributes to climate change, its packaging is polluting, and its consumption contributes to obesity. The use of premade foods and sales from vending machines increase as lunch times grow ever shorter. In addition, …

Attempts to modify dietary habits of individuals in order to improve their nutrition do not seem to have met with success. Patterns established by individuals appear to continue throughout their lifetime. Diet patterns are influenced by society, families, and peer groups.
From pre-school through adolescence environmental factors of influence are ever present. Influences may be the result of hereditary attitudes passed from generation to generation. However, the need for diet improvement seems primary. Research to discover methods or systems to affect such habits is needed from the science of nutrition.
The continued failure of man to produce food for the …
