We are researching this topic because it directly applies to us along with millions of other United States citizens. Upon close examination by nutritional professionals, concern has arisen regarding the typical contents of a young adult diet. In terms of the rate at which young adults choose to consume nutritionally-dense food items, the rate at which nutrition-deficient junk food items are chosen over the former is significantly higher. Among further examinations of this issue by researchers, it has become evident that the nutritional decisions made by young adults are increasingly associated with several social, commercial, mental, educational, and economic influences. Objective: We completed a study to determine how food insecurity, access to exercise opportunities, and county classification (rural or urban) impacted obesity rates in Ohio. We hypothesized that the county classification impacted obesity the most followed by food insecurity and access to exercise opportunities.
Methods: We obtained data on food insecurity, access to exercise opportunities, and obesity from County Health Rankings and county classification data from the United States Department of Agriculture Census. Objective: The purpose of the study was to examine perspectives on food access among a low-income, food desert community through participation in a grant funded CSA program.Design: Healthy Eating Program is a pilot program assessing the effect of a CSA intervention on health among residents living in a food desert. On September 11, 2017, the owner of an independent grocery store in Syracuse, New York’s Near Westside neighborhood announced that the store would close within the month. The Near Westside is often characterized by its high levels of concentrated poverty for African American and Hispanic neighborhood residents. Nojaim Brothers Supermarket opened in 1919 and persisted for 97 years amidst an unfavorable political and economic landscape marked by the creation of both chain grocery stores and supermarkets as well as the effects of urban renewal and disinvestment. Food deserts indicate limited access to and affordability of healthy foods. One potential mediator is the availability of healthy food in non-traditional outlets such as dollar-discount stores, stores selling produce at the fixed $1 price. The purpose of this study was to compare availability, quality, price differences in ‘healthier’ versus ‘regular’ food choices, price per each food item, and summary score in dollar-discount stores to grocery stores in Las Vegas using the NEMS-S; a protocol consisting of three subscores—availability, quality, price of healthier versus regular food, and a summary score. Many low-income areas of the United States are considered food deserts because people living in those communities have limited access to fresh fruits and vegetables (FFV); lack of FFV is tied to numerous health issues, including cardiovascular disease and obesity. The Heart Smarts Program (HSP) provides increased access to FFV in food deserts, as well as providing participants with nutrition education courses and health screenings, including blood pressure. Food insecurity is defined as a lack of access to “sufficient, safe, and nutritious food that meets individuals’ dietary needs and preferences for an active and healthy life.” From 2015 to 2016, the number of people undernourished increased from 777 million to 815 million worldwide. Food insecurity affected 12.3 % of Nebraskans and 13.8% of the residents in Douglas County during the same year. Background: Food deserts are areas of decreased access to nutritious and affordable foods. Residing within a defined food desert is thought to decrease consumption of produce, dairy, and whole grains and increase consumption of energy-dense foods as well as body mass index (BMI).

For many people, the corner store remains the main grocer, or the only source of sustenance in minority communities. This study examined the distribution of corner stores as a future reference point to provide healthy food access to predominantly African American communities that lack full service grocery stores. Business data was obtained from respective county by use of Standard Industrial Codes. Background: Due to inadequate resources and limited access to healthy foods, residents of food deserts struggle to maintain a well-balanced, nutritious diet. These factors increase the risk of developing obesity and diet-related chronic diseases. Local farmers’ markets serve as community-level interventions, bringing healthy food to food deserts. Over the past two decades, farmers’ markets have been growing in numbers nationally. The present study explores the relationship between food deserts, placement of farmers’ markets, and availability of food assistance programs in Georgia.

The Indy East Food Desert (IEFD) appears to suffer from many common conditions noted by various scholars as food desert identifiers. Yet, its situation still remains unique. Though there is a prevalence of minority populations, low-income households, and low-education attainment levels, there are also factors of low-access, poor food options (within the limited food outlets in the neighborhoods), and poor eating habits which shape the situation of the community. "Food desert" commonly describes food insecure areas with few fresh food outlets. Though used in a number of sources, the definition of "food desert" remains largely undeveloped and research is often deficit oriented, failing to account for community assets that may exist within food deserts but are underutilized or under-supported. Using an assets-based, ethnographic approach, this study combines GIS and survey methodology with participant observation and qualitative interviews to assess the potential positive effect of urban agriculture on food accessibility in Sulphur Springs, a USDA identified urban food desert in Tampa, Florida.

Objective: Assess the impact of the rural food environment on the eating behaviors and BMI of rural low-income children. Method: Statewide (Maine, 2009) household survey of parents of children on Medicaid (n=1722), oversampled in six rural communities, resulting in n=272 for six target communities. Food environment measured using modified Nutrition Environment Measures Survey in Stores (NEMS-S) for 46 retail food outlets. Multi-variate analysis assessed factors affecting home food environment, child's eating behavior and BMI. Results: Home food behaviors (how often: family eats together, child eats breakfast, vegetables served) and parent food consumption were significantly associated with children's healthy eating behaviors. …

The U.S. has seen a spike in chronic diseases along with worsening health outcomes. There are many factors at play to create these circumstances, especially regarding the social determinants of health, like socioeconomic status, access to food, and geographic location.
