College Students And Snap: The New Face Of Food Insecurity In The United States, Nicholas Freudenberg, Sara Goldrick-Rab, Janet Poppendieck

Over the last decade, multiple studies of food insecurity among college students have found rates from 20% to more than 50%, considerably higher than the 12% rate for the entire US population.

Reasons for higher rates of food insecurity among college students include a growing population of low-income college students, high college costs and insufficient financial aid, more financial hardship among many low- and moderate-income families, a weak labor market for part-time workers, declining per capita college resources, and Supplemental Nutritional Assistance Program (SNAP) policies that specifically exclude many college students from participation.

Introduction: The Appalachian region has worse health outcomes than the remainder of the United States. These disparities are often linked to the underlying social and environmental determinants of health. Adverse childhood experiences (ACEs) are associated with poor health outcomes across the lifespan and have a significant impact on future social determinants as an adult, including food security status.

Background: College students experience food insecurity at a rate 3.5 times higher than the U.S. general population, affecting 43% of students. Furthermore, college students consume high amounts of ultra-processed products. NOVA, a food classification system, takes into account food processing and is thought to better fit the modern food environment.

Purpose: The purpose of this research project was to examine the impact of CalFresh enrollment on food security status. This study also evaluated the impact of two different nutrition education interventions (MyPlate and MyPlate+NOVA) on participants’ dietary habits and nutrition knowledge.

Objective: To examine the association between parenting styles and overall child dietary quality within households that are low-income and food-insecure.

Design: Child dietary intake was measured via a 24 h dietary recall. Dietary quality was assessed using the Healthy Eating Index-2005 (HEI-2005). Parenting styles were measured and scored using the Parenting Styles and Dimensions Questionnaire. Linear regressions were used to test main and interaction associations between HEI-2005 scores and parenting styles.

Background: The Neighborhood Produce Market (NPM) is a food distribution model similar to a mobile food pantry. NPM stakeholders observed a lack of community engagement and familiarity with produce offered.

Project Description: The objective was to develop a nutrition education curriculum for NPM volunteers to better engage families and community members by providing food samples, recipes, and nutrition education. A stakeholder steering committee guided the needs assessment, curriculum development, volunteer training, and pilot test. Seeds that Feed (STF) is a mobile food pantry located in Fayetteville, Arkansas. STF receives produce from local farmers to distribute to residents in low-income housing sites throughout Northwest Arkansas. According to Feeding America, food insecurity affected 14.3% Washington County, Arkansas’ population in 2016. The objectives of this cross-sectional study were to: (i) determine whether there are differences in self-esteem and self-efficacy for healthy lifestyle choices between children living in food secure and food insecure households; and (ii) determine whether the association between household food insecurity (HFI), self-esteem and self-efficacy differs by gender. Survey responses of 5281 fifth-grade students (10 and 11 years of age) participating in the Canadian Children's Lifestyle and School Performance Study II were analyzed using logistic and linear regression. Examining University Food Systems: Understanding Student Food Insecurity Levels And Food Waste At Minority-Serving Institutions, Amy Louise Gootee-Ash

This quantitative study investigated food insecurity levels and attitudes and behaviors towards food waste at minority-serving colleges (MSIs). A validated survey from the United States Department of Agriculture’s (USDA) Adult Food Security Survey Modules (AFSSM) was used to assess food security population levels. Paper 1 of the three included is a case study at a MSI (n = 229) that examined food security levels. No significant relationships at the p < .05 were found between food security and student ethnicity, living arrangements, meal plan enrollments, or grade-point averages. Paper 2 examined food security at three MSIs (n = 449) and two traditional, diverse schools (TDUs; n = 236). Food security levels between MSIs and TDUs were shown to be statistically significant (p < .05), while levels of student financial aid participation between MSIs and TDUs were not statistically significant. A comparison of food security levels at regional-state colleges in Delaware and Maryland reveal a significant difference in levels of food security (p < .05). The third paper found no significant relationship between students (n = 222) who were exposed to food waste education campaigns and reported levels of food waste behaviors. No statistical significance could be discerned between meal plan offerings and reported plate waste, which is food thrown away by consumers after a meal.

Diabetes is a chronic condition affecting more than 30 million adults living in the United States. Diabetes self-management (DSM) can prevent or delay the complications of diabetes and improve clinical outcomes; however, data show that low-income, food insecurity, female gender, and race contribute to challenges performing effective DSM. Antenatal care may be a means to reduce food insecurity in pregnancy and postpartum periods.

Objective

With the use of a cluster-randomized design, we tested whether participation in nutrition-focused antenatal care intending to improve household knowledge about the importance of nutrition for pregnant and lactating women and encourage allocation of household resources to ensure sufficient quality and quantity of foods, without providing food assistance, would reduce household food insecurity.

A number of studies have measured college student food insecurity prevalence higher than the national average; however, no multicampus regional study among students at 4-y institutions has been undertaken in the Appalachian and Southeast regions of the United States.
