Nutrition and Food Science Faculty Research Publications

Calcium β-hydroxy β-methylbutyrate (HMB) supplementation has been reported to reduce catabolism and promote gains in strength and fat free mass in untrained individuals initiating training. However, the effects of HMB supplementation on strength and body composition alterations during training in athletes is less clear. This study examined the effects of 28-d of calcium HMB supplementation during intense training on markers of catabolism, body composition, strength, and sprint performance. In a double-blind and randomized manner, 28 NCAA division I-A football players were matched-paired and assigned to supplement their diet for 28-d during winter resistance/agility training (~8 hr/wk) with a carbohydrate placebo …

Further Evidence For The Relationship Between Eating Frequency, Body Mass Index, And Physical Activity, Mona Jahjah Ashchi Sep 2000

Further Evidence For The Relationship Between Eating Frequency, Body Mass Index, And Physical Activity, Mona Jahjah Ashchi

FIU Electronic Theses and Dissertations

The relationship between the frequency of eating, physical activity and Body Mass Index (BMI) was investigated. Seventy five women, aged 24 to 55, were recruited from Florida International University. Via interview, subjects provided information regarding demographics and habitual eating frequency over 24-hours, and completed both the Baecke Questionnaire of Habitual Physical Activity and the Health Insurance Plan of New York Questionnaire on Physical Activity. Pearson correlations and partial correlation coefficients were used to assess the relationship between eating frequency, physical activity, age, and BMI. Results revealed significant positive correlations between eating frequency and total physical activity scores, and leisure time …

Facing A Paradigm Shift In Professional Credentialing: Preparedness Of Registered Dietitians For Professional Development 2001, Nancy Collins

FIU Electronic Theses and Dissertations

In the year 2001, the Commission on Dietetic Registration (CDR) will begin a new process of recertifying Registered Dietitians (RD) using a self-directed lifelong learning portfolio model. The model, entitled Professional Development 2001 (PD 2001), is designed to increase competency through targeted learning. This portfolio consists of five steps: reflection, learning needs assessment, formulation of a learning plan, maintenance of a learning log, and evaluation of the learning plan. By targeting learning, PD 2001 is predicted to foster more up-to-date practitioners than the current method that requires only a quantity of continuing education hours. This is the first major change …

Effects Of High Fruit Intake On Systematic Blood Pressure In African Americans, Leonard L. Gibbons May 2000

Effects Of High Fruit Intake On Systematic Blood Pressure In African Americans, Leonard L. Gibbons

Loma Linda University Electronic Theses, Dissertations & Projects

This randomized dietary intervention trial examined the effects of a high fruit diet on systemic BP in African-Americans. Thirty-eight free-living subjects with systolic BPs between 130-159 mm Hg and diastolic BPs between 85-99 mm Hg, were enrolled for a six week period. The cases were given daily supplements of potassium rich foods: bananas, orange juice and raisins, while no dietary advice or food was given to the controls.

After six weeks, the means systolic BP was 5.79 mm Hg ( p=.009) lower in the cases than the controls. The mean diastolic BP at week six was 3.76 mm Hg (p=.047) …

Serum Lipid Response To N-3 Fatty Acid Enriched Eggs In Persons With Hypercholesterolemia, Nancy M. Lewis, Kim Schalch, Sheila E. Scheideler Mar 2000

Serum Lipid Response To N-3 Fatty Acid Enriched Eggs In Persons With Hypercholesterolemia, Nancy M. Lewis, Kim Schalch, Sheila E. Scheideler

Department of Nutrition and Health Sciences: Faculty Publications

Consumption of long-chain n-3 polyunsaturated fatty acids (n-3 PUFA) is low among certain population subgroups in the United States, especially in people living in Midwestern states and those who dislike fish. Therefore, there is a need to identify acceptable food sources of n-3 PUFA. Vegetable oils, such as canola and soy, provide some n-3 fatty acids. However, these sources are high in n-6 fatty acids and there is concern that they may have detrimental side effects. Eggs enriched in n-3 PUFA can be produced by incorporating sources of these fatty acids into poultry rations. In acceptability studies, US consumers responded …

UNF Graduate Theses and Dissertations

The purpose of this study was to compare the nutritional status of a rural population of Mossi people in Burkina Faso during the pre- and post-harvest seasons. Comparisons were made between the sample population and the American population, between the pre- and post-harvest seasons, between males and females in the sample population and between the various age groups in the sample population.

This nutritional assessment consisted of collecting demographical information, anthropometrical measurements such as weight and height, a clinical assessment to evaluate physiological signs of nutritional deficiencies and a food frequency questionnaire to describe the dietary practices of the population. …

Enriched Eggs As A Source Of N-3 Polyunsaturated Fatty Acids For Humans, Nancy M. Lewis, S. Seburg, N. L. Flanagan

Department of Nutrition and Health Sciences: Faculty Publications

Dietary intake of omega-3 fatty acids (n-3 PUFA) decreases the risk of heart disease, inhibits the growth of prostate and breast cancer, delays the loss of immunological functions, and is required for normal fetal brain and visual development. The US has not established a recommended daily intake for n-3 PUFA. However, Canada has established the Canadian Recommended Nutrient Intake (CRNI) at 0.5% of energy. Dietary sources of n-3 PUFA include fish, chicken, eggs, canola oil, and soybean oil. Food consumption studies in the US indicate that the majority of Americans do not meet the CRNI for n-3 PUFA. Mean n-3 …

Relation Between Internal Parasites With Basic Services And The Nutritional Status Of Children Five Years Of Age In The Indigenous, Black And Mestizo Communities Of The Rural Area, Imbabura Province, R. Patricio Paguay Ruiz

Theses and Dissertations

Various studies have been done to determine the prevalence of anemia in our country, but these studies don't reflect the true magnitude of this sickness, considered in Ecuador a problem of public health since these investigations correspond to urban sectors and margins and not to rural places where the care is very deficient and in certain cases useless, mainly because of the difficult access and the lack of economic resources of the government institutions. The current work was realized in coordination with the school of Nutrition and Dietetics and with the help of the Benson Agriculture and Food Institute was …

Application Of Dietary Guidelines For Guatemala In Three Rural Communities Of Chiquimula, Sandra Liseth Salazar Donis

Theses and Dissertations

In Guatemala, nutritional problems are directly related to the difficulty to purchase food fit for human consumption due to low family incomes as well as low nutritional education. This situation motivated the realization of the present study whose main objective was to apply the dietary guidelines for Guatemala in three rural communities of Chiquimula. All three communities were previously aided by Benson Institute efforts to promote changes in eating behavior. The sample was comprised of mothers from the El Pinalito, El Guayabo, and Maraxco communities of the department of Chiquimula. There were eight mothers, four literate and four illiterate, from …
