Background: In the United States, major health disparities exist among low socioeconomic status (SES) and other marginalized communities. Many of these health disparities are nutrition-related and include diabetes, hypertension, and cardiovascular disease. Many individuals in this population lack education regarding nutrition, increasing risk of disease and the detrimental impacts that these diseases can have.

Objective: The aim of this project was to identify barriers that members of low SES and marginalized communities face and adapt nutrition education materials to be culturally appropriate for the immigrant and refugee population in the Northern Colorado area.

Food allergies have been an increasing concern worldwide with very little information on preventative measures and treatment. They can have long lasting and life-threatening consequences with a wide range of symptoms from hives to anaphylactic shock. Long recommended feeding guidelines, vitamin and mineral deficiencies, and gastrointestinal alterations are thought to play a role in the increase in food allergies in infants. The vestibular system senses head motion and facilitates gaze stabilization, allowing for clear vision during movement. The vestibulo-ocular reflex (VOR) causes the eyes to move opposite head motion, thus maintaining focus on a target. Consequently, uncompensated loss of vestibular function leads to reduced VOR function resulting in dizziness, nausea, and visual disturbance. Nonmedical use of prescription stimuluants (NMUS) can cause adverse outcomes for college students including academic impediments, such as a lowered GPA, and polyuse of illicit substances (Garcia et al., 2021; Holt & McCarthy, 2019; Norman & Ford, 2018). The current study investigated the demographics, academics, stress, and polysubstance use between students who endorsed NMUS and those who did not in an undergraduate college population sample at a large public university in the Southeast. Supplementation with nicotinamide riboside (NR), a form of vitamin B3 and a precursor of nicotinamide adenine dinucleotide (NAD+) extends lifespan in the nematode C. elegans and delays aging-related pathologies in mammals. During aging, levels of NAD+ decline causing metabolic dysfunction and oxidative damage. Studies in C. elegans found that when NR was administered during larval development it induced the mitochondrial unfolded protein response (UPRmt), which is frequently associated with lifespan extension. Chronic kidney disease (CKD) progresses faster in males than females; however, the underlying mechanisms remain poorly understood. Sex differences in glomerular capillary morphology has been hypothesized to contribute, in part, to the increased susceptibility to hypertension-induced renal injury and CKD progression in males, but this has not been investigated. The goal of the present study was to assess glomerular capillary morphology in male vs. female rats with intact kidneys and after uninephrectomy (UNX). Asian mothers, as an aggregate, may be at increased risk for adverse perinatal outcomes, but heterogeneity between disaggregated Asian American subgroups is an understudied topic. The first objective of this study is to examine differences in perinatal outcomes between disaggregated Asian American subgroups and differences compared to Non-Hispanic Whites (NHWs). The present study sought to explore the effect of repetitive sub-concussive head impacts on the P3 event-related potential (ERP) amplitude and measures of movement kinematics. University students participating in collision, contact, and non-contact sports at the club and varsity level completed a cued visuomotor adaptation task. Results indicated that participants who estimated experiencing four or more sub-concussive head impacts per week display a significantly reduced P3 amplitude across both normal and adaptive trials. Additionally, participants who estimated experiencing less than four sub-concussive head impacts per week displayed no significant changes in P300 amplitude between “switch” and “stay” trials.
