It has been examined that poor access to nutritious foods and limited opportunities for physical activity is prevalent among children from underserved families. These deficiencies contribute to increasing childhood obesity rates and emphasize the need for early interventions. Establishing nutritional literacy and understanding the importance of an active lifestyle in early childhood can lead to long-term health benefits and reduction in chronic disease later in life (HHS & USDA, 2015; Tsai et al., 2011; Wang et al., 2011). Due to a lack of resources, awareness, and reinforcement of information, underserved youth are predisposed to unique health concerns. The health disparities prevalent among children living in poverty are many, but the topics of focus for this community outreach project include mental health, obesity, and asthma. Supplemental health education curriculum has the potential to alleviate the health disparities prevalent among such a vulnerable population (Thomas & Aggleton, 2016). Nine months out of the year, students within the United States attend elementary school to be educated on English, mathematics, history, and other topics. The Anoka- Hennepin School District’s philosophy of an elementary education highlights many important factors for success in school but neglects to highlight nutrition as one of the factors. Honduras is a country with great healthcare needs. Within health care, the largest percentage of mortality is due to conditions occurring in the perinatal period, including prenatal and maternal health, delivery and postnatal care (PAHO, 2017a). Additionally, malnutrition continues to affect infants as they growth throughout their childhood (Gray, Cossman, & Powers, 2006). Education is shown to produce positive outcomes in low-income populations (Perkins, et al, 2011). The popularity of marathon running has grown exponentially since the 1970s (Noakes, 2003). This major gain in popularity has led to an increased interest in hydration and nutrition for marathon runners (Tucker et al 2009). The effects of dietary factors such as carbohydrates (CHO) and water on endurance has been extensively studied related to performance, but few studies have examined nutrition’s effect on feelings of exertion. The current study aimed to determine how the in-race nutrition and hydration habits of marathon runners affect their feelings of exertion throughout a 26.2-mile race.
