INTRODUCTION: Information regarding effects of hypohydration (HY) and hyperthermia (HT) on cognition, mood and development of symptoms is conflicting since the two conditions often confound each other. Further, although obese individuals may have physiological impairments during heat stress, whether psychological impairments occur with HY and HT is unknown. PURPOSE: To assess the independent and combined effects of mild HY and HT on cognition, mood, and the development of symptoms in obese and non-obese females. METHODS: Twenty-two healthy females (11 non-obese, 22±2y, 61±6kg, 25±4% body fat; 11 obese, 22±2y, 80±18kg, 44±5% body fat) volunteered in two randomized, repeated-measures trials, involving passive …

Based on current literature, oral health in long-term care (LTC) facilities is frequently of low priority and does not follow evidence-based best practices. Poor oral health reduces the quality of life of older adult residents and patients and can lead to systemic diseases, such as cardiovascular disease, stroke, and pneumonia, the leading cause of death in LTC. Occupational therapists can play an instrumental role as oral care consultants, and educators, and can act as resource guides to raise the standards of oral care in LTC facilities.

In the United States, the major dietary source of protein is poultry meat, particularly chicken. Phosphorus absorption in chickens is a critical problem in poultry production. It therefore is important to understand the cellular and molecular regulation of phosphorous absorption in intestine to increase efficiency of the process. This would provide the benefits of reducing feed costs and reducing phosphorous excretion, thereby contributing to the sustainability of agriculture in the United States. Therefore, the focus of this thesis is determining the effect of vitamin D metabolites involved in phosphate homeostasis using the chicken as a model.

Objective: Gluten, a protein found in wheat, rye and barley has been linked to the inflammatory response of the GI tract in individuals with Celiac Disease, non-celiac gluten sensitivity, and in some cases irritable bowel syndrome (IBS). Today, 85% of corn, 93% of soybeans, and 88% of cotton in the U.S. are genetically modified (GM). Using laboratory methods, genes from one species, such as a plant, can be transferred to an unrelated species, such as an animal. Genetically modified crops may lead to higher yields, have improved food quality, texture, and nutritional value, and have an increased shelf life.
Despite these promising benefits, the potential health risks relating to the consumption of GM food remain inadequately assessed. Genetically modified food is not subjected to rigorous safety testing, such as epidemiologic studies, to identify potential health risks. Two …

Addiction to highly refined foods, specifically sugar, may result in excessive caloric intake, which enhances comorbidity risks, such as obesity and cardiovascular disease. The American Heart Association recommends that women limit “added sugar” intake to 25 g per day (1). Purpose: To determine the relationship between food addiction and sugar consumption. Methods: IRB approved the study, and IT Services sent out a recruitment email to 1992 college-aged females. Participants gave their informed consent and completed two surveys: the Yale Food Addiction Scale (YFAS) (n=160) and the Automated Self-Administered 24-hour dietary recall (ASA24) (n=57). The design of this project was two-fold; the research component included examination of data from a previous investigation and compared it with data collected in a community service project. In each, the aim was to assess the health habits of underserved Spanish communities and provide information and opportunity for engagement with health education. Data were collected from voluntary participants in Panama and West Dallas. Genetically modified organisms (GMOs) refer to organisms whose DNA has been altered to produce a certain characteristic. GMOs account for a significant proportion of the crops produced in the United States. Specifically, GMO corn accounted for approximately 88% of all corn grown for human and animal consumption in the year 2012. Previously conducted studies have not uniformly demonstrated the safe use of GMO corn, and no studies have been conducted to analyze the addictiveness of GMO corn.

Multiple sclerosis (MS) is an autoimmune demyelinating neuropathy that affects nearly 2.5 million people worldwide. Despite substantial efforts, few treatments are currently available largely due to limited knowledge of pathogenic mechanisms underlying the disease. The immune-inflammatory nature of the pathology has prompted investigation of the role of oxidative stress in disease development and progression; however targeting reactive oxygen species for neutralization has had marginal success therapeutically, suggesting that an alternate oxidative stress-related target would prove beneficial. This thesis seeks to explain the relationship between a household's choice of fuel and the health and nutrition outcomes of children below the age of 5 in Uganda. The first objective is to examine the association between the choice of fuel and the incidence of acute respiratory infection (ARI). The second objective is to measure the relationship between choice of fuel, ARI and nutrition outcomes of children. ^ I use data from the 2006 and 2011 Uganda Demographic and Health Surveys (UDHS). Disciplinary actions against attorneys involve substance abuse 50 to 75 percent of the time. Teff (EragrostisTef) is a fascinating grain, ancient, minute in size, packed with nutrition and used for centuries as the principal ingredient of the Ethiopian population diet. The micro- and macronutrients level of teff grainis apparently higher than that of barley, wheat and sorghum and the amino acid composition comparable to that of egg protein, except for its lower lysine content. Here I discuss the role the film “Babe” has played in helping people address these challenges and make this moral progress. It is thought that a significant number of young people (mostly girls, now young women) became vegetarians due to their seeing “Babe.” These people are often called “Babe Vegetarians,” influence by what has been called “The Babe Effect.” Many of their stories are found on the internet.

The Live Well Springfield (LWS) movement is a collaborative effort of partner organizations in Springfield, Massachusetts. The project promotes healthy living by increasing knowledge and awareness of food and physical activity. A key LWS strategy was the creation of a website to function as an information hub. In addition to local event and health information, the website features 16 narratives depicting residents practicing healthy lifestyle choices, designed to encourage community engagement. To date, there has been no evaluation of the website’s reach and effect.

This study determined if the co-ingestion of carbohydrate (CHO) with branched-chain amino acids (BCAA) or L-leucine (LEU) preferentially affected serum IGF-1 and the expression of myogenic-related genes in response to resistance exercise (RE). Forty one, college-age males were randomly assigned to 1 of 4 groups: CHO, CHO-BCAA, CHO-LEU, or placebo (PLC). Resistance exercise consisted of 4 sets of leg press and leg extension at 80% 1RM. Supplements were ingested peri-exercise, and venous blood and muscle biopsies were obtained pre-exercise (PRE), and at 30, 120, and 360 min post-exercise. Background: Heart rate is used as a health biomarker. This aim of this study was to investigate the effects of playing active video games on the heart rate of older adults, in comparison to the heart rate after common table recreational activity.
Methods: An experimental study with 40 participants was conducted: a control group (n=20) participated in common Pokeno® card games; an experimental group (n=20) played WiiTM bowling. The participants’ pre- and post-activity heart rates were measured and compared between and within groups using t-tests.
