Cattle health and production records (CHPR) are data collected by cattle producers and veterinarians in the form of measurements, observations, counts of events over time, and physiologic attributes that describe individual and group-level health and production. These data are useful to both veterinarians and cattle producers for making evidence-based decisions on cow-calf operations. Currently, there are no uniform, industry-wide methods of capturing and recording CHPR in the U.S. cow-calf industry. Although many cow-calf producers in the U.S. are thought to collect some form of CHPR, it is believed that relatively few are doing so in an electronic manner that facilitates …

This study will focus on how maternal phosphorus status of beef heifers affects the growth and performance of their calves. Heifers have been offered free-choice mineral with either 0 or 4% supplemental phosphorus from 30 days after weaning until calving. A study by H. Hilfiker, a University of Arkansas honors student, investigated the effects of these treatments from 30 days after weaning until 60 days after the breeding season when heifers were confirmed to be bred or open. Grasslands in the Northern Plains provide the primary forage source for ruminants throughout much of the year (Schauer et al., 2004). Supplementation practices are often necessary to maintain production and offset forage nutritive decline throughout the grazing season (Schauer et al., 2004; Cline et al., 2009). Typically, to maintain a targeted production level, energy and protein supplementations are used for grazing livestock (Caton and Dhuyvetter, 1997). To determine the effects of a diet that provides 30% energy from protein with ½ as lean, red meat on risk factors of metabolic syndrome in humans. This pilot study was a 3- month, randomized, control, intervention trial with 33 participants (Beef-Intervention n=18; DASH-Control n=15) who displayed markers of metabolic syndrome. Registered Dietitians Nutritionists recruited and educated participants on Beef-Intervention Lean Beef Pattern, (30% of energy from protein with ½ as lean red meat, 40% carbohydrate, 30% fat) or DASH-Control dietary pattern, (15% of energy from protein, 55% carbohydrate and 30 % fat). Laser induced breakdown spectroscopy (LIBS) is an emerging technique in the field of food analysis which provides various advantages such as minimal sample preparation, chemical free, rapid detection, provision of spatial information and portability. In this study, LIBS was employed for quantitative analysis of copper content in minced beef samples spiked with beef liver over three independent batches. Copper content was determined with graphite furnace atomic absorption spectroscopy (GFAAS) in order to obtain reference values for modelling. The aim of this study was to determine the effect of dietary vitamin D3 supplementation on changes in color and heme pigment (myoglobin and metmyoglobin) in 4 beef muscles. The muscles came from 48 crossbred bulls that were subjected to supplementation with vitamin D3 at 4 different doses: 0.0 (control group), 3.5, 7.0, and 10.0 x 106 IU. The effect of 5% CO pretreatments prior to vacuum packaging of beef striploin steaks (Longissimus thoracis et lumborum, LTL) on quality attributes, primarily colour stability was investigated. The aim was to determine the optimum pretreatment that would induce the desirable red colour, while allowing discoloration to occur by the end of a 28-day display period (2°C), so as to not mask spoilage. The purpose of this study was to determine the relationship between sarcomere length and basic composition (water, protein, ash, collagen, and fat content including marbling) of beef muscles with fast-twitch glycolytic (longissimus dorsi muscle) and slow-twitch oxidative fibers (infraspinatus muscle) in Limousin bulls. Samples (n = 15) were obtained from federally inspected slaughter facilities, and animals used in the experiment were treated according to standard ethical norms. The shortest sarcomeres were observed for longissimus dorsi from striploin, and the longest for infraspinatus muscle. Additionally, the influence of both cut and animal was observed. There are multiple breeds of beef cattle available to utilize in breeding systems to maximize production and economics. Calving difficulty (dystocia) is a significant cost to beef production and is more prevalent in first-calf heifers. The objectives of this study were to estimate genetic parameters and breed differences for calving difficulty and birth weight as a first step towards the development of across-breed adjustment factors for calving difficulty.

The effects of three different meat-containing breakfast meals (pork, beef or chicken) on acute satiety and appetite regulatory hormones were compared using a within-subjects study design. Thirty fasting non-smoking pre-menopausal women attended a research centre on three test days to consume, a meat-containing meal matched in energy (kJ) and protein content, palatability, and appearance. No difference was found between meat groups for either energy intake or macronutrient profile of food consume data subsequent ad libitum buffet lunch, or over the rest of the day. The fatty acid content and chemical composition of retail samples of beef and lamb meat were investigated. Fifty beef and lamb chops were purchased from different supermarkets in İstanbul on separate occasions. The average muscle fatty acid content was 2395 and 2257 mg/100 g of muscle for beef and lamb, respectively. Saturated and polyunsaturated fatty acid contents were 1000 and 940 mg/100 g, and 199 and 261 mg/100 g of muscle for beef and lamb, respectively. Overall results indicate that, particularly before the Sacrifice Holiday, concentrate-based feeding of livestock increases and this has an adverse effect on the n-6/n-3 ratio …

Australian retail samples of nine beef, six lamb, four veal and two mutton cuts were purchased from 10 retail outlets (butchers and supermarkets) in different socio-economic areas of Sydney and Melbourne. The lean and fat components were analysed for contents of total and individual fatty acids. The content of total fatty acids was less than 5g/100g edible meat in the lean component of all cuts analysed. Saturated and monounsaturated fatty acids comprised, on average, 40% and 42% respectively of total fatty acids in the lean component of red meat cuts. This study aimed to update data on the gross composition Australian red meat to reflect changes in butchering practices since the 1980s and 1990s when the current values were derived. The Effect Of Duration Of Finishing Period On The Performance, Slaughter, Carcass, And Beef Quality Characteristics Of Eastern Anatolian Red Bulls, Abdülkadi̇r Özlütürk, Nuri̇ni̇sa Esenbuğa, Mete Yanar, Necdet Ünlü, Muhli̇s Maci̇t, Si̇nan Kopuzlu

Seventeen Eastern Anatolian Red (EAR) bulls at 20 months of age were divided into 2 treatment groups and fed for either 168 days (S) or 210 days (L). Initial and final weights were not significantly different. While bulls in the L group had the highest total weight gain (149.0 vs. 177.2 kg), feed efficiency ratio was superior for the cattle fed for 168 days. Carcass weight, spleen and front + hind feet weights as a percentage of slaughter weight, weight of kidney fat, percentage of kidney, pelvic, and heart fat, and yield grade all increased (P < 0.05) with feeding time. Bulls in the L group received a higher (P < 0.05) panel rating for juiciness, and the panel juiciness score was closely associated with tenderness measurements such as panel tenderness score, Warner Bratzler shear force value, and number of chews before swallowing. It is concluded that duration of finishing significantly influenced carcass, slaughter, and organoleptic beef quality traits of young EAR bulls.

Two 500g retail samples of thirteen beef, eleven lamb, four veal and two mutton cuts were purchased from 10 retail outlets (butchers and supermarkets) in different socio-economic areas of Sydney and Melbourne in 2002. One sample of each was cooked using standard low fat methods, and the lean and separable fat components of each raw and cooked sample were analysed by the National Measurement Institute in Melbourne for macronutrients, cholesterol, vitamins A, B1, B2, B3, B6, and beta-carotene as well as sodium, potassium, calcium, iron, zinc, magnesium, manganese, and phosphorus. Australian retail samples of nine beef, six lamb, four veal and two mutton cuts were purchased from 10 retail outlets (butchers and supermarkets) in different socio-economic areas of Sydney and Melbourne. The lean and fat components were analysed for contents of total and individual fatty acids. The content of total fatty acids was less than 5g/100g edible meat in the lean component of all cuts analysed. Saturated and monounsaturated fatty acids comprised, on average, 40% and 42% respectively of total fatty acids in the lean component of red meat cuts. This study aimed to update data on the gross composition Australian red meat to reflect changes in butchering practices since the 1980s and 1990s when the current values were derived. The objective of this research was to compare some chemical and physical characteristics of mechanically deboned and hand deboned turkey meat and beef. Samples were analyzed for proximate composition, cholesterol, TBA, calcium and iron contents, hunter colour parameters and fatty acid composition. Deboning method affected chemical composition of beef and turkey meat. Mechanical deboning resulted higher cholesterol values and calcium and iron content. In hand deboned turkey meat the most abundant fatty acids were C16:0, C18:1 and C18:2. Mechanical deboning process was increased the percent of C18:1, C18:2 and C18:3 in turkey meat. Longissimus dorsi muscle obtained from beef carcasses was used in this study. Meat cores 2.54 cm in diameter were marinated in 0.34, 0.68 and 1.02 M sodium chloride (NaCl) and 0.05, 0.1 and 0.15 M calcium chloride (CaCl_2) solutions at 5 °C for 72 h. Warner Bratzler Shear (WBS) values were significantly different between samples. The samples marinated with CaCl_2 held less water than those marinated in NaCl. Cooking losses were lower in the control samples than in the marinated samples. Differential scanning calorimetry was employed to determine the amount of bound water in the meat samples.
