International Journal of Faith Community Nursing

In rural America, high rates of obesity are influenced by a lack of education and limited community resources. The purpose of this study was to assess the effect of an educational intervention on recommended nutrition and body mass index knowledge and to describe the perceived stress in a rural female faith community. A quantitative quasi-experimental pre-test post-test research design was used. English speaking female participants (N=49) 18 years of age and older from two rural community churches received an educational intervention based on the Health Belief Model. Food insecurity occurs when an individual does not have consistent access to fresh, nutritious food in safe, socially acceptable, and affordable ways. This is a significant challenge facing Kentuckians, with one in six adults and one in four children experiencing some degree of food insecurity. The present study examines the effectiveness of customized nutrition education in improving 1) nutrition-related behaviors associated with food insecurity and 2) management of household food supply in food-insecure individuals with and without children. Peripheral blood mononuclear cells (PBMCs) can respond to dietary stimuli modulating the up-regulation of pro-inflammatory cell signaling, which is associated with metabolic disease and has been seen to be elevated in African American (AA) when compared to Caucasian American (CA) women. Little is known about the response of PBMCs to a high fat meal among women and the potential impact of ethnicity and/or weight status on this response. Young adult females who participate in endurance sports are at risk of developing Female Athlete Triad (FAT). The high prevalence of FAT among collegiate athletes and its potentially lifelong consequences substantiate the importance of relevant research. Children with type 1 diabetes, T1DM, live with a widely misunderstood, chronic disease. The daily management regimens and psychosocial aspect of T1DM bring attention to the child with diabetes. Myths and misconceptions of diabetes management abound. The intent of this research is to address myths and misconceptions by reading a children’s book, written and illustrated by the researcher, to students in grades 3-5 at a local elementary school and measuring change in knowledge with an assessment tool based on book content.

The study involved a single subject, a non-verbal child on the autism spectrum, in a clinical setting over a 10 week period. The subject was on a three point sensory diet that was administered before therapy sessions. The tactile, vestibular and proprioceptive systems were targeted with deep pressure touch, a suspension swing, and joint compression. The primary focus was on participation in therapy and language development with specific attention given to the increase of vocalizations and/or verbalizations. To date, most research in the area of college women and eating disorders has only been conducted to determine the prevalence of eating disorders among selected college subgroups. Although such research is limited, particularly for those women that choose to join social sororities, it generally indicates that sorority women represent a subgroup with high instances of eating disorders and often presents a conflicting view of these women's eating patterns and beliefs regarding weight loss and food. The prevalence of hypertension in the U.S. and similar industrialized countries continues to rise. Millions of people are affected in America alone. Usual treatment includes a low sodium diet, weight loss if needed, and drug therapy. Some health providers also encourage stress management as an adjunct to therapy. These treatments have been shown to be effective but patient compliance continues to be poor. Past research has explored the relationships between dietary calcium and hypertension and has found that there is an interaction between blood calcium levels and high blood pressure.
