Abstract

Background: Forty percent of the US population ages 20-39 are categorized as obese,

their BMI is over 30, and 35% of college age students are obese or overweight. Issues related to obesity cost the US $147 billion annually. Between 40%-50% of college students are reported to be inactive. Inactivity can lead to increased morbidity and mortality related to increased risks of cardiovascular disease, diabetes, hypertension, musculoskeletal issues, and depression. Providing dietary and physical activity education and access to nutritional information promotes behavior change in young adults.

This research project investigates the diets of various sport athletes at the University of Rhode Island. The question that this project aims to answer is if our athletes are meeting recommended daily values nutritionally, and if not, why? Research continues to grow regarding how performance implications are tied to varying nutritional disparities for athletes. Various studies show malnourishment leads to performance decline, increased injury risk, and improper recovery. Adipose tissue is a diverse and crucial component to vascular health due to its role in energy storage and heat production. The primary function of white adipose tissue (WAT) is energy storage while the function of mitochondria-rich brown adipose tissue (BAT) is heat production. Perivascular adipose tissue (PVAT), which surrounds blood vessels, contains both WAT and BAT adipocytes. Dietary calorie restriction is associated with increased lifespan with decreased adiposity. Increased prevalence of WAT-like PVAT, due to high-fat diets and obesity, leads to increased metabolic disfunction and cardiovascular-disease. Whey protein isolate supplementation has been recognized as having potential for regulating appetite, thereby potentially improving mood and food intake. The objectives of this project were to 1) analyze the effects of high-quality whey protein intake on overall diet and 2) identify and examine a correlation between tryptophan levels and mood regulation. In this study, analyses were conducted to compare fillet quality attributes of 4 rainbow trout families (40, 102, 159, and 187) fed fish meal (FM) and a fishmeal free diet (FMF), to two age endpoints, 9 and 11 months.

Previous studies with rainbow trout have evaluated the effect of age, diet, and family on growth performance and fillet quality. However, a comprehensive analysis of variables is lacking for rainbow trout, one of the main aquatic foods for domestic and international consumers.

Nutrition therapy has lately gained attention as an effective way of combating the novel Coronavirus 2019 (COVID-19), especially to address the immunity in an individual and their overall health. The present study is a bibliometric assessment of research conducted to understand the role of nutrition in treating COVID-19 which was carried out since the pandemic's sudden outburst during 2020 and 2021 and published in the Scopus database.
