High fat feeding increases hepatic fat accumulation and is associated with hepatic insulin resistance. AMP Activated Protein Kinase (AMPK) is thought to inhibit lipid synthesis by the acute inhibition of glycerol-3-phosphate acyltransferase (GPAT) activity and transcriptional regulation via SREBP-1c. The purpose of this study was to determine if chronic activation of AMPK prevented an increase in GPAT1 activity in rats fed a high fat diet. Effects Of Three Emulsion Compositions On Taste Thresholds And Intensity Ratings Of Five Taste Compounds, J. E. Thurgood, Silvana Martini

This study assessed the effects of three emulsified systems on taste thresholds and the near-threshold taste intensities of the five tastes (sweet, sour, salty, bitter and umami). Emulsions were formulated with different lipid chemical compositions. Lipid addition in an emulsified form significantly increased thresholds for sour and bitter tastes produced by citric acid and quinine hydrochloride, respectively. No significant differences were found in the threshold levels in emulsions formulated with different lipids for the five tastes evaluated. In general, for the same tastant concentration, taste intensities for sour and bitter tastes were lower in emulsions compared with the aqueous solutions, …

To assess what factors are driving the exponential growth of farmers’ markets in Kentucky, geospatial and statistical analysis of a database of 121 farmers’ markets was conducted. A statewide survey of market leaders and a case study of a single farmers’ market both identified reasons for growing support of farmers’ markets in Kentucky.

Market distribution, vendor levels, and gross sales were mapped against a backdrop of county urban classification, median household income, and education levels. The Bon Secours St. Francis Downtown Hospital has recently changed their menus to offer meals in which the entrŽes are liberalized when possible. The purpose of this study was to evaluate the performance of a newly introduced menu cycle in an acute-care facility foodservice system featuring a spoken word liberalized menu. Plate waste analysis was done by weighed measurements, using visual measurements when absolutes were observed (all or none). Performance of the menu was assessed with weighed plate waste analysis to determine weight of food consumed, energy consumed, and cost of food wasted. Meal consumption averaged 56% of the meal …

Milk fat globule membrane surrounds the fat droplets of milk. It is a biopolymer containing primarily membrane glycoproteins and polar lipids which contribute to its properties as a possible neutraceutical. The aims of the studies were to determine if dietary milk fat globule membrane: (1) confers protection against colon carcinogenesis; and (2) promotes gut mucosal integrity while decreasing inflammation compared to diets containing corn oil or anhydrous milk fat.

Shelf-stable canned butter is currently available in retail stores, and many home-preservationists promote home-canning of butter. Non-cultured butter is a low-acid canned food, which would presumably require thermal processing. The lack of a thermal process step in canned butter products raises questions of potential safety, because they are hermetically sealed and generally exhibit anaerobic growth conditions, which are optimal for Clostridium botulinum growth. Without thermal processing, low-acid canned foods (LACF) must have inhibitory factors present to prevent C. botulinum growth. Background: Systemic inflammation is linked to cardiovascular risk, but the influence of persistent pathogens, which are conventionally dichotomously categorized, on circulating levels of inflammatory markers is not clear. Antibody levels of pathogens have not been examined in relation to inflammation.
Methods: Using data from a subsample of the Multi-Ethnic Study of Atherosclerosis, we examined circulating levels of interleukin-6 (IL-6), C-reactive protein (CRP) and fibrinogen in relation to five common persistent pathogens: cytomegalovirus, herpes simplex virus-1, Hepatitis A virus, Helicobacter pylori and Chlamydia pneumoniae. Vegetable oil is an important commodity; however, the majority of commercially available vegetable oils have a fairly short shelf life, which limits their usefulness for long term food storage, disaster relief, space travel, food aid programs, and military rations. Vegetable oils with high oleic acid and reduced linolenic acid contents, especially with added antioxidant combinations, were previously found to have significantly longer oil stability index (OSI) values than traditional vegetable oils. The purpose of this study was to develop an understanding of how adult participants describe quality of life during or after participation in the Expanded Food and Nutrition Education Program (EFNEP) at sites across the United States. The study analyzed success stories submitted by EFNEP staff and participants from sites in nine states from the years 2004 to 2010. A total of 1,057 success stories were analyzed.

The success stories were descriptions of the participants’ experiences with EFNEP. The stories were analyzed by highlighting words, phrases, and/or sentences, and creating a short one to three word codes that would best …

Cross-Sectional And Longitudinal Associations Of Neighborhood Characteristics With Inflammatory Markers: Findings From The Multi-Ethnic Study Of Atherosclerosis, Aydin Nazmi, Ana Diez Roux, Nalini Ranjit, Teresa E. Seeman, Nancy S. Jenny

We investigated cross-sectional associations of neighborhood deprivation, problems, safety, and cohesion with circulating levels of fibrinogen, interleukin-6, and C-reactive protein (n=5370) and longitudinal associations with changes in IL-6 over a 3–4 year period (n=946). In cross-sectional analyses, higher levels of neighborhood deprivation and problems were associated with higher levels of all three inflammatory markers, whereas higher levels of safety were associated with lower levels. Fibrinogen remained associated with all neighborhood characteristics except cohesion and IL-6 remained associated with safety after adjustment for race and SES. Two primary types of milling processes currently exist, resulting in quite different feed products. These processing plants produce and market a variety of feed products, but in general, the dry milling process produces distillers grains plus solubles (DGS), and the wet milling process produces corn gluten feed (CGF). These feeds can be marketed as wet feeds, or they can be dried and marketed as either dry corn gluten feed (DCGF) or dry distillers grains (DDG) with or without solubles.

Effective methods of grain disinfestation include freezing, the use of carbon dioxide gas, and the use of pesticides. Oxygen deprivation has also been shown to be an effective method of disinfestation when the oxygen content is held below 1% for at least 12 days (d). High Density Polyethylene (HDPE) 5 gallon (gal) buckets have become a popular and convenient storage container for dry foods such as wheat, rice and beans. The purpose of this research was to explore the current efforts using spirulina as a malnutrition treatment in Kenya. There are currently five spirulina cultivation sites that growing spirulina, four of which are located in the Nyanza Province. Their production and scope of advocacy efforts are limited. Some of the cultivation sites have a better quality control measures and strategic plan in place for expanding cultivation. Significant efforts need to be made to improve the scope of production and create links with nutrition experts in other non-governmental organizations and at the national level.
