A Study Of Teacher Practices And Perspectives On Nutrition Education In Maine Elementary Schools, Alexandra J. Courtney

The purpose of this study was to identify how multiple influencing factors on nutrition education, relating to professional development, teacher self-efficacy, teacher beliefs, program use, wellness policies, and environmental factors, influence the amount of time elementary educators spend teaching nutrition in their classrooms. The primary tool for data collection was a comprehensive survey developed using Qualtrics software. The survey was distributed to Maine superintendents and principals who were asked to pass the survey along to K-5 teachers. Eating For Environmental And Personal Health: Green Eating, Health Behavior And Environmental Perceptions At The University Of Maine, Moira E. Burke

The purpose of this study was to determine if green eating (GE), defined as environmentally conscious eating, in college students had an impact on BMI, health behavior, fruit and vegetable intake, physical activity, and perceptions of the campus environment. This was a cross-sectional study of undergraduate and graduate students (n=190) at the University of Maine. The GE Survey was used to determine GE stage of change; participants were classified as either pre-action (precontemplation, contemplation, preparation) (n=113) or post-action (action, maintenance) (n=77). There are low retention rates of dietitians and this impacts quality of care. Emotional intelligence (EI) may be the missing component to improve retention, due to EI increasing job satisfaction and decreasing burnout for other health providers. The purpose of this study was to examine the relationship between EI, job satisfaction, and burnout for dietitians. The theoretical framework utilized was the 4-branch model of EI. Method of inquiry was convenience, quantitative non-experimental design. Registered dietitians (N = 84,173) living in the United States were contacted via e-mail. Improving the nutritional status of hospitalized patients has been shown to reduce length of stay (LOS), hospital costs, readmission rates, complication rates, and mortality. Provision of nutrient-rich, liquid, oral nutrition supplements (ONS) is one approach to improving nutritional status. ONS use has been associated with improved outcomes among patients with diagnoses of orthopedic injuries and pressure ulcers, mainly using prospective designs among elderly and/or malnourished patients. Less information is available for other diagnoses, and no analysis of the effects of ONS could be found that considered the epidemiological triad of person, place, and time. A food program has been established to provide children of low-income families free and reduced meals. In the Western Connecticut area, hypertension and diabetes are the top two reasons for admitting seniors to the hospital. Both of them can be managed by healthy diet and exercise. Aortic stiffness is an independent risk factor that has prognostic value regarding future cardiovascular disease (CVD) events such as myocardial infarction, strokes, and heart failure. Although death rates due to coronary heart disease have declined in recent years, the leading global killer remains CVD and prevalence is still high. Understanding lifestyle contributors associated with aortic stiffness would provide the public with insight into targeting key health-related behaviors.
