Modeling Heat Transfer During Cooling Of Ready-To-Eat Meat And Poultry Products Using Three-Dimensional Finite Element Analysis And Web-Based Simulation, Jihan F. Cepeda Jimenez
Department of Biological Systems Engineering: Dissertations and Theses
The meat industry is required to comply with processing performance standards for preventing the growth of foodborne pathogens in products. These performance standards, established by the United States Department of Agriculture - Food Safety and Inspection Service (USDA-FSIS) require a reduction of Salmonella spp (lethality standard) and limit the growth of sporeforming bacteria (stabilization standard) in certain processed meat products. In general, strategies used to comply with these standards are associated with thermal processing. Meat processors have difficulties complying with these performance standards. Moreover, thermal processing deviations are an issue in the meat industry that generate uncertainty regarding the safety …
Pharmacokinetic Evaluation Of The Blood: Tissue Relationship In Poultry: Screening For Antibiotic Residues In Chicken Muscle, Ixchel Reyes Herrera
Pharmacokinetic Evaluation Of The Blood: Tissue Relationship In Poultry: Screening For Antibiotic Residues In Chicken Muscle, Ixchel Reyes Herrera
Graduate Theses and Dissertations
During their life, humans are exposed to numerous substances that are naturally present in the environment or that are the result of man made processes, including heavy metals, persistent organic pollutants, pesticides and veterinary drugs. Some of these substances can leave residues in food products and possibly expose consumers to their potential toxic effects. To address these problems extensive regulatory efforts are devoted to prevent, detect and control these substances from reaching the food supply. However, given the vast diversity of food products that requires monitoring and the immense diversity of potential chemical contaminants, the need for an efficient and …

Selecting And Preparing Broilers For Show, David D. Frame
All Current Publications
Raising meat-type chickens at home can be a rewarding and productive experience. Not only does it put meat in the freezer, it can also be a great 4-H project for young poultry enthusiasts. Many counties provide opportunities at fairs and other venues to show broilers in competition.
Biosecurity Principles: Protecting Your Investment, David D. Frame
Biosecurity Principles: Protecting Your Investment, David D. Frame
All Current Publications
Although the magnitude of economic value is usually much less in small standard-bred poultry operations compared to multimillion-dollar commercial chicken or turkey companies, there are still many reasons to protect your investment. Value is not always measured in simple dollar terms.

Animals/Livestock
On February 12, 2003, the Environment Protection Agency (EPA) published new concentrated animal feeding operation (CAFO) regulations designed to protect or restore water quality. EPA provided the option of adopting the national EPA CAFO regulations, or states could develop and implement their own regulations. Tennessee chose to develop and implement CAFO regulations that fit Tennessee’s animal production and water quality situations. In August 2004, the Tennessee Department of Environment and Conservation (TDEC) issued the final CAFO regulations for poultry operations.
TDEC has defined a CAFO as an animal-feeding operation (AFO) if animals are confined for at least 45 days in …

The biological basis of sustained fertility in broiler and turkey hens is their capacity to store sperm in the oviductal sperm storage tubules (SST) located in the uterovaginal junction. The objectives of this study were to determine if the numbers of SST varied between 4 strains of broiler breeders and determine the number of SST in the turkey before (less than 9 d of photostimulation) and after (up to 22 d of photostimulation and laying) photostimulation. No statistical differences were observed in SST numbers in the 4 strains of broilers examined or in turkey hens before and after the onset …
