This research aimed to explore the roles of food security status (FSS), financial literacy (FL), and nutrition literacy (NL) on the diet quality (DQ) of college students at the University of Maine. This research additionally sought to understand mediational relationships among these factors that could impact DQ.
A cross-sectional convenience sample of college students completed an online questionnaire assessing sociodemographic factors, short healthy eating index (sHEI)-score, FSS, FL, and NL. Participants' continuous data were analyzed using a Pearson correlation. Differences between interactive NL and sHEI-score while controlling for gender and meal plan differences were analyzed using a MANCOVA. Additionally, differences …

Resiliency is a growing concentration in all levels of disaster preparedness where the focus is on how to deal with the growing number of disasters stemming from global climate change. Urban areas—characterized by high human densities and associated buildings and impermeable surfaces—are increasing globally and represents a leading threat to wildlife that is drastically altering the natural resources they are accustomed to. Prior studies suggest that living in urban habitats can cause wildlife to show increased cholesterol levels; in biomedical research, elevated cholesterol is linked to disease, but the consequence of elevated cholesterol in wildlife remains unclear. The Trivers-Willard hypothesis states that mothers can adjust their offspring sex ratios according to their own condition and the environmental conditions they face during breeding. Past tests of this hypothesis in avian species have focused on how natural variation shapes sex allocation trade-offs. However, urbanization also influences individual condition and presents animals with novel challenges in optimizing their brood sex ratio. One likely mediator of the relationship between environmental conditions, parental condition, and sex ratios is corticosterone (CORT), the primary glucocorticoid in birds. Diet and physical activity are influenced by a person’s culture and may contribute to the presence of health disparities within a geographic region. Health disparities are evident in Appalachia where a unique cultural identity exists. Culture-based initiatives focused on improving diet quality and increasing physical activity have improved health outcomes in diverse groups, yet interventions considering geographically tied cultures, like Appalachia, are limited. Purpose: To examine if an online grocery shopping intervention improves meal planning and preparation and subsequent dietary intake. The primary hypothesis was that online shopping can improve meal planning and meal preparation habits while also improving dietary intake.
Method: Participants were randomized to either online only (O), online plus nutritional nudges (O+I), or standard brick and mortar (BM). Those in the O+I arm received behavioral nudges three (3) times per week and were part of a Facebook group assisting them with meal planning, nutrition education, and reminders to shop online. Diabetes is a chronic health condition that affects millions of Americans. It can have significant, lasting effects on an individual’s mental and physical wellbeing, especially when it goes unmanaged or untreated. Food insecurity is associated with disordered eating in National Collegiate Athletic Association (NCAA) male athletes. This study evaluated the impact of a food education program on youth food security and disordered eating of high school football players in rural, Appalachian Mississippi. A Pre-Post design was utilized. Prospective participants (n=47) were recruited in July, 2019. The 12-week season-long food education program included weekly education with practical food-based sport nutrition principles along with food packages to implement principles at home. The Lower Mississippi Delta is characterized by poverty, chronic health issues, health disparities, and food insecurity. The rural Delta communities are primarily African American, experiencing disproportionately higher rates of poverty, job loss, and chronic health problems. Historically, chronic health issues have persisted in these areas over time, including obesity, hypertension, and diabetes, which have only seemed to increase in this region. These urban environments present novel situations to native species, frequently resulting in their displacement or extirpation. However, some species, often referred to as “urban adapters”, have thrived in these landscapes. Coyotes (Canis latrans) are a prime example of a species that has adapted to exploit urban habitats. This study focuses on the factors that enable and threaten rural first-generation STEM students’ persistence. Limited empirical studies are available that focus on rural first-generation STEM majors’ persistence. Quantitative analysis was conducted using Kruskal Wallis H and Mann-Whitney U tests to determine any significant differences with the survey results. Content and thematic analysis was conducted on the student and faculty interviews to determine themes of enabling and threatening factors affecting persistence.

Objective: To quantitatively assess coaches perceived confidence in coaching rural wellness coalitions and to qualitatively determine barriers and facilitators to success in coaching rural wellness coalitions.
Design: A mixed methods design was utilized with quantitative (scorecard) and qualitative (key informant interviews) methodologies.
Setting: Six rural South Dakota wellness coalitions.
Participants: Extension wellness coalition coaches (n=7), one previous and six current.

In the early 1800s morphine was distilled from opium extracted from opium poppy plants (Quinones, 2015). Soon after a chemist invents a synthetic derivative of opium and names it diacetylmorphine (heroin) (Quinones, 2015, (Drugs and Morphine Text, 2018). Adults living in food insecure households consume fewer fruits and vegetables than adults living in food secure households (Hanson & Connor, 2014). The purpose of this study was to examine differences in fruit and vegetable behaviors (intakes; perceptions) of parents of elementary school children by food security status (food secure compared to food insecure; fully food secure compared to not fully food secure) in rural, Appalachian Mississippi. Background: Green Eating is a multidisciplinary approach to health in economic, public health, and environmental issues. GE has an evident impact on the quality of life in young adults, especially those on college campuses. Current evidence already supports an improved dietary intake in those who adopt GE behaviors. Objective: To determine if a university’s campus location affects first-year students’ exposure to green eating. We hypothesize that first-year students on university campuses located in urban settings are more likely to report GE awareness and practices than in rural settings.

The school food environment has the ability to increase the consumption of fruit and vegetables in rural adolescents. This study used a survey to allow adolescents in seven rural counties to self-report their fruit and vegetable intake as well as utilizing the USDA Mathematica tool and the School Nutrition and Meal Cost Study audits to evaluate what food and beverage products were actually available to adolescents. By using these two measures, associations between fruit and vegetable intake and availability of healthy and unhealthy foods were determined. Four Vermont organizations or farms were interviewed to better understand the successes and challenges associated with increasing rural food access. The purpose of this qualitative study was to determine the perceived causes of obesity in six counties of rural Kentucky and to determine how to customize strategies to reduce obesity in these areas. The northern mockingbird (Mimus polyglottos) is a common bird species found in North America that in the past 150 years has expanded its distribution north. It is now commonly seen in urban and suburban areas were at one point, it was rarely seen outside of rural and forested areas. After the study, I determined that there is a negative relationship between the number of people in the surrounding area and the distance when the birds flew away.

Household food security status in rural areas is a significant issue facing caregivers as positive health outcomes depend on appropriate access to healthy foods necessary to lead an active life.
