Soybeans are known for their high protein content that could be substituted for animal proteins. The potential bioactive properties of mature soybean (MS) proteins and their hydrolysates have been widely explored. The aim of this study was to investigate and compare various in-vitro bioactive properties (antioxidant, anti-diabetic, anti-obesity, and anti-inflammatory) of young soybean (YS) and MS flour and their protein hydrolysates when subjected to in-vitro simulated gastrointestinal digestion (SGID) and enzymatic hydrolysis, respectively. Snake Venom is a highly modified form of saliva, contains hundreds of zootoxins, necrotoxins, cytotoxins, neurotoxins, and mytotoxins, all of which are primarily made up of mostly proteins, polypeptides, and other components such as enzymes, lipids, and carbohydrates. Although snake venom is known for its harmful effects, it has also had a positive impact in scientific discovery and medicine. Some toxins from snakes function to inhibit pain, and this means they can be very effective analgesics. Phage K is a lytic bacteriophage that infects a broad range of staphylococci, including some methicillin-resistant Staphylococcus aureus strains. Phage K attaches to its host via a baseplate. The contracted conformation of the baseplate contains a fiber and two receptorbinding proteins responsible for the interaction with the host. The native conformation of the baseplate also includes a tail central spike that shears off after contraction. The aim of the thesis is the structural characterization of phage K receptor-binding proteins and tail central spike. 2-Dimensional Electrophoresis is one of the tools in the identification of proteins by molecular weight and pH. The display of molecular weight allows the researcher to quickly identify whether a specific protein or peptide string is in the sample. The pH measurement allows even better resolution between different species in the sample. The MultiEnzyme ElectroPhoresis (MEEP) program tries to model that by providing a graph that displays separated protein strings by both molecular weight and pH.
