Alzheimer’s disease and related dementia (ADRD) rates are expected to triple by the year 2050. Early detection and specific mitigation efforts are warranted to blunt the alarming rate. Physical function (PF) declines with age, but higher physical function is associated with better cognitive functioning in middle-to- older age individuals. Moreover, greater physical activity (PA) is associated with better global cognition; however, Apoliporotein e4 carriers may not gain the same benefits with exercise. Additionally, plasma phosphorylated tau 217 (p-tau217) has been identified as a novel diagnostic ADRD biomarker which needs further research to examine associations with risk factors. There are approximately 5.7 million Americans currently living with Alzheimer’s Disease (AD). Early detection of cognitive impairment allows for earlier treatment, potentially slowing or halting cognitive decline. A 30-min web-camera eye tracking assessment (30-min VPC) has been validated as a tool to predict AD risk. However, a shorter version would allow for greater scalability and improve user experience. Within Latin America and the Caribbean, severe food insecurity is highest in Haiti. Fifty-five percent of the population lives below the poverty line with approximately 50% of the population undernourished. Given the typical diet in the developing world is primarily plant-based, the two studies presented in this thesis examine how eggs, a locally available animal protein, impact physical growth, cognitive development, and motor skills of food-insecure children from a single orphanage in Leogane, Haiti when added to the diet.

Inconsistent findings have been observed on the impact of hydration state on cognitive functions. The isolated effect of hypohydration on neurocognitive performance, balance, vestibular ocular motor function and mood outcomes in widely used concussion assessment tools has not been studied. The purpose of this study was to investigate how hypohydration affected the results in concussion testing batteries. A single-blind randomized crossover design was used. Thirteen healthy males (22 ± 4y, 180.9 ± 5.7cm) without history of concussion within the past six months or any condition or disease that could influence outcome measurements participated in this study. Embodied cognition has received a fair amount of attention in philosophical, neuroscientific, and robotic research during the past several decades, yet the precise nature of its goals, methods, and claims are unclear. This dissertation will ascertain and examine the primary themes in the field of embodied cognition as well as why, and if, they offer significant challenges to traditional cognitive science models.
