Grass-finished beef (GFB) can provide beneficial bioactive compounds to healthy diets, including omega-3 polyunsaturated fatty acids (n-3 PUFAs), conjugated linoleic acid (CLA), and secondary bioactive compounds, such as phytochemicals. The objective of this study was to compare fatty acids (FAs), micronutrients, and phytochemicals of beef fed a biodiverse pasture (GRASS), a total mixed ration (GRAIN), or a total mixed ration with 5% grapeseed extract (GRAPE). The objective of this study was to assess the impact of cattle finishing diet and muscle type on meat quality. Consumer sensory response, proximate composition, Warner–Bratzler shear force (WBSF), fatty acid composition, and volatile compounds were assessed from the gluteus medius (GM) and triceps brachii (TB) muscles of cattle (n = 6 per diet) which were grain-finished (USUGrain) on conventional feedlot or 2 forage diets, a perennial legume, birdsfoot trefoil-fin-ished (USUBFT; Lotus corniculatus), and grass-finished (USUGrass; Bromus riparius). The primary objective was assessment of effect of sample pooling on Tritrichomonas foetus detection using qPCR in beef bulls within 5 logs of trichomonad concentration in spiked preputial samples. The secondary objective was to use qPCR Ct values to estimate the percentage of beef bulls in the field population within each log of trichomonad concentration. Solutions containing none, 1,10,100,1000 and 10,000 trichomonads (T)/ml were made and tested by qPCR. Test sensitivities for single positive samples were: 1 T/ml, 20/40 (50%); 10 T/ml, 40/40 (100%); 100 T/ml, 40/40 (100%); 1000 T/ml, 40/40 (100%); 10,000 T/ml, 40/40 (100%). For 5-sample pools (1 …

For rotational grazing of pastures to be most successful, it’s important to match pasture production to ruminant intake, because both can change during the grazing season. This publication shows how a rising plate meter can be used to calculate available pasture dry matter, allowing pasture managers to optimize pasture utilization and ruminant production on pasture.

Livestock grazing on the GSENM provides significant economic benefits to Garfield and Kane Counties. If all Active and Suspended AUMs were utilized, there would be increased economic benefit. If ranching on the GSENM were lost, the economic sustainability in the Garfield-Kane Economic Region would be greatly reduced.

Beef cattle require a number of dietary mineral elements for regular bodily maintenance, growth and reproduction. Minerals that are essential in larger amounts are labeled as major or macro elements. Those needed in smaller amounts are called micro, minor or trace minerals. These terms, have no relationship to the metabolic significance of a mineral in the diet. A trace mineral can be as crucial to the health and performance of an animal as a major mineral.

In a feeding trial at Utah State University during the summer of 2013, it was found that cattle had higher ADG when fed SFC compared to whole corn. However, when the relative cost of SFC and whole corn were considered, feeding whole corn compared to SFC resulted in nearly identical feed costs per pound of gain. Actual and relative costs of SFC and whole corn can and do vary over time and across geographic regions. Therefore, feeders could use the information in this fact sheet to determine which feed will be the most economical for them.

The objectives of this study were to use a meat flavor lexicon to identify and quantify flavor differences among different types of meats such as beef, chicken, lamb, pork, and turkey, and to identify and quantify specific flavor attributes associated with “beef flavor” notes. A trained descriptive panel with 11 participants used a previously developed meat lexicon composed of 18 terms to evaluate the flavor of beef, chicken, pork, turkey, and lamb samples. Results show that beef and lamb samples can be described by flavor attributes such as barny, bitter, gamey, grassy, livery, metallic, and roast beef. Inversely related to …

Winter feeding costs have often been cited as one of the most expensive aspects of beef cattle production in the Intermountain West. Research and rancher experience suggests that using forage kochia for fall/winter grazing may help reduce these costs.
