Meat color is the most important product characteristic that impacts consumer purchasing decisions. Therefore, the major objectives of this thesis were to determine the impact of myoglobin oxygenation level and frozen storage duration on both frozen and thawed beef color. USDA Choice strip loins (n=36) were aged for 4 d or 20 d and cut into steaks. Steaks were randomly assigned to a myoglobin oxygenation level [deoxymyoglobin (DeOxy; immediately packaged), oxygenation (Oxy; oxygenated in air for 30 minutes), or high oxygenation (HiOxy; packaged for 24 h in 80% O2)]. Heifers (n = 229; 225 kg ± 2) were used in a 2 x 2 x 2 factorial to determine the effects of longterm exposure to corn distillers grains plus solubles (DGS) on meat quality characteristics. Factors included supplementing 0.91 kg (LW) or 2.3 kg (HW) modified DGS (MDGS) while grazing corn stalks; 0.6% BW dry DGS (SS) daily or none (NS) during summer grazing; and finishing diet containing 40% wet corn gluten feed (CGF) or 40% MDGS (DGF) on a DM basis. This research was conducted to investigate the effects of feeding high levels of wet distillers grains plus solubles (WDGS) with straw on fatty acids profiles, lipid stability, retail color, and proximate composition (fats and moisture) of aged beef. Cattle (n = 336; 270 ± 9 kg) were fed corn/5% straw; 40 Distillers grain (WDGS)/5% straw; 70 WDGS/8% straw; 70 WDGS/25% straw; 77.5 WDGS/9% straw; 77.5 WDGS/17% straw, and 85 WDGS/10% straw on dry matter (DM) basis.
