Mares’ milk is characterised by unique nutritional profile. In this study, the microbiological analysis of mares’ milk was performed. The presence of total bacteria, total lactic bacteria, Lactobacillus spp., Streptococcus lactis, Salmonella spp. and coliforms was investigated. Moreover, the influence of refrigerated and frozen storage on the total bacteria count, vitamin C, acidity and colour of milk was examined. Pathogenic Salmonella spp. and coliforms were not detected in the raw milk. It was revealed that mares’ milk can be stored for 72 hours under refrigeration at a temperature of +4 °C without reducing its microbiological quality. Most of the physicochemical …

Outbreaks of foodborne human illnesses resulting from contaminated raw or minimally processed fruits and vegetables have been widely reported globally. The microbiological challenges associated with fresh produce are diverse and respond differently to minimal processing technologies. Atmospheric cold plasma is a relatively new technology and represents a potential alternative to traditional methods for decontamination of foods. The objective of this work was to determine the influence of extrinsic atmospheric cold plasma (ACP) treatment control parameters and to optimize treatment parameters for decontamination with respect to different forms of key safety challenges pertinent to fresh produce.

Helicobacter pylori and Campylobacter jejuni colonize the stomach and intestinal mucus, respectively. Using a combination of mucus-secreting cells, purified mucins, and a novel mucin microarray platform, we examined the interactions of these two organisms with mucus and mucins. H. pylori and C. jejuni bound to distinctly different mucins. C. jejuni displayed a striking tropism for chicken gastrointestinal mucins compared to mucins from other animals and preferentially bound mucins from specific avian intestinal sites (in order of descending preference: the large intestine, proximal small intestine, and cecum). Horticultural products such as mushrooms are exposed to environmental conditions during their postharvest life, which may affect product quality. Loss of whiteness during storage is particularly important in the mushroom industry. Rough handling and distribution, fruiting body senescence and bacterial infections are among the main causes of mushroom discolouration.
