A critical component in commercial poultry production is to ensure birds are provided clean, quality water. Multiple disinfectants can be utilized to optimize a good water quality program. The goal of these water disinfectants is to greatly reduce or eliminate the presence of all bacteria. In recent years, the oxidation-reduction potential (ORP) meter has been a tool utilized by the poultry industry to monitor chlorine efficacy in drinking water. It is well known that arginine vasotocin (AVT) in birds is involved in physiological homeostasis such as cardiovascular, osmotic regulation as well as reproductive functions. Pertinent to these physiological functions, AVT immunoreactive (-ir) neurons in the hypothalamus have been found associated with hemorrhage, dehydration, oviposition and other physiological regulation. Evidence, however, suggests that AVT also plays significant roles in modulating behavior, memory, stress, and food intake. This dissertation research addresses the latter two neuroendocrine functions of AVT in detail within the chicken brain. Broilers, Cobb 500 (n = 1584) were housed in 3 commercial houses (121.9 x 12.2 m). In each house birds were randomized and placed in 72 pens of 121.9 x 121.9 cm (22 bird/pen, males and females). Phytohemagglutinin (PHA) is commonly used to gain insight into an individual’s cellular immuno-competence. PHA is typically injected intradermally (i.d.) into the skin (e.g. wing web) and the tissue swelling response is then monitored, whereby the extent of the swelling positively relates to the individual’s cellular immune system capabilities. Pattern recognition receptors (PRRs) on host cells recognize motifs known as pathogen associated molecular patterns (PAMPs) that are common to groups of microbes. Examples include LPS on Gram-negative bacteria, the structural motif PGN common to all bacteria, MDP the smallest immunostimulatory unit of PGN, and poly I:C the dsRNA analog. Recently, the poultry industry has encountered an emerging muscle myopathy known as woody breast (WB), which is characterized by hardness throughout the Pectoralis major muscle. Two experiments were performed to assess sensory characteristics and acceptability of WB meat and to determine the effect of broiler age on meat quality factors in varying severities of WB. Fillets were categorized as normal (NORM), moderate (MOD), or severe (SEV) WB. Enclosed water system has created a minimal sanitation focus leading to biofilm issues which are a source of flock health challenges. A series of in vitro tests were conducted to evaluate biofilm growth on polyvinylchloride (PVC) surfaces when exposed to treated/untreated water sources (test water) that are typically supplied in commercial barns. However, consumption of poultry products is strongly associated with foodborne illness from Campylobacter. In the first study, chitosan, caprylic acid and their combination were evaluated as a coating treatment for the reduction of Campylobacter jejuni on poultry products. Indirect calorimetry to study heat production (HP) and dual energy X-ray absorptiometry (DEXA) for body composition (BC) are powerful techniques to study the dynamics of energy and protein utilization in poultry. The first two chapters present the BC (dry matter, lean, protein, and fat, bone mineral, calcium and phosphorus) of modern broilers from 1 – 60 d of age analyzed by chemical analysis and DEXA. Age of hens and feed allocation can affect egg yolk lipid compositions which in turn directly relate to chick quality. A series of experiments were conducted to determine the effects of age and feeding programs on lipid metabolism in breeder hens and progeny. In the first trial, the rate of yolk absorption and fatty acid profiles in the yolk were compared among 28, 35, and 49wk old hens.
