Sustainability is an important, commonly discussed societal goal regarding assurance of resources for the world to be able to enjoy a prosperous future. Three primary dimensions of sustainability include environmental, economic, and social sustainability, and objectives for various projects can be aimed at any of the three dimensions to pursue societal sustainability. Solar installations, which can be used to pursue environmental and economic sustainability, convert abundant sunlight to electricity, displacing fossil fuel use that contributes harmful greenhouse gases to the atmosphere. Samples collected at five different large bird poultry processing facilities over a period of 7 months from prescald to post debone locations were enumerated for Enterobacteriaceae, Salmonella spp., and Campylobacter spp. and the results were used to create Quantitative Microbial Risk Analyses (QMRA) models for parts, ground, and mechanically separated chicken (MSC) products. Sensitivity analyses indicated the points in the process at which reductions would be most advantageous to the endpoint and simulation models were run to test reductions required to meet the current USDA performance standards.

There is a need to investigate alternate uses and treatments of broiler litter that lessen environmental impacts and decrease costs associated with its disposal. Anaerobic digestion is a biological process in which organic material is converted to a renewable fuel source. However, the substrate for anaerobic digestion often requires some form or pretreatment. Certain types of fungus have been investigated as a pretreatment for anaerobic digestion, one of which is Pleurotis ostreatus or the oyster mushroom, which also produces an edible fruiting body. A critical component in commercial poultry production is to ensure birds are provided clean, quality water. Multiple disinfectants can be utilized to optimize a good water quality program. The goal of these water disinfectants is to greatly reduce or eliminate the presence of all bacteria. In recent years, the oxidation-reduction potential (ORP) meter has been a tool utilized by the poultry industry to monitor chlorine efficacy in drinking water. An ORP reading of 650-750 millivolts (mV) has become the industry standard for assuring an acceptable sanitizing residual of free chlorine is present for controlling microbial contamination regardless of the actual …
