Water scarcity is a global reality and with the anticipated population growth, freshwater resources will be further strained to meet both human needs and agriculture applications. To ensure a water sustainable and food secure future, all aspects of agriculture must become more efficient. Two strategies were explored. The potential of improving water efficiency in broilers was examined. The first strategy was to develop a more efficient and accurate method for measuring water consumption/inputs in agriculture. To date, water measuring technology has lacked the necessary sophistication to assure accuracy and repeatability of low flow water usage.

Plant-based diets are primarily derived from plant sources, including fruits and vegetables. Such patterns are associated with health benefits by promoting general health and preventing many diseases and metabolic disorders. Fruits and vegetables are key sources of high-quality nutrients such as dietary fibers and polyphenols. Although the root is widely consumed, sweetpotato leaves (SPL) are often discarded and are only consumed in a few countries. In the United States, SPL consumption is limited to private gardens, particularly in the Southeastern United States. Not only are SPL a good source of nutrients such as vitamins and minerals, but they also contain polyphenol compounds including the caffeoylquinic acid derivatives and carotenoids such as lutein. Several studies have shown the polyphenol contents and antioxidant capacities of SPL, which vary based on year and variety, while few studies have shown anti-colon cancer effects of SPL. Trace minerals, particularly copper, zinc and manganese, play a role in ensuring optimal immune function. To examine the effects of diets containing different levels and sources of trace minerals on the inflammatory response, Cobb 500 broilers were fed four experimental diets containing 5 mg/kg Cu and 45 mg/kg of Zn and Mn or 10 mg/kg Cu and 90 mg/kg Zn and Mn in either the sulfate or hydroxychloride form. When the broilers were 5 weeks of age, 16 μg of lipopolysaccharide (LPS) was injected into the pulp of growing feathers (GF; 16 GF per chicken; 1 μg LPS per GF). …

Epidemiological studies have shown an association between high carrot consumption and low prevalence of cancer. This observation has been thought to be attributed to carrot carotenoids. Despite this, various intervention trials have displayed no changes in incidence or increased incidence of cancer with carotenoid supplementation. It is possible that carrot phenolics are responsible for this association, though this has not been widely accepted. Volatile terpenoids from carrots have not been studied in this regard. Background: Obesity is a major health concern in the United States. Omega-3 fatty acids (O3FA) have been observed to improve metabolic health and therefore might be useful in treatment of obesity. However, little is known regarding the effect of O3FA on school aged normal weight and overweight children.

Objective: The objective of this thesis was to determine if habitual intake of O3FA at breakfast improves energy metabolism, appetite, and metabolic response in overweight and obese school-aged children.

This qualitative study assessed consumers’ current methods of determining portion sizing of chicken products and examined their perceptions of how effectively three package designs communicate portion size. Everett M. Rogers’ Diffusion of Innovations (DI) Theory analyzes the characteristics of the consumer of the innovation (adopter) and the impact these characteristics have on adopting new innovations. The innovation in this study will be the prototype packaging. Focusing on Rogers’ adopter characteristics and defined proprietary consumer segmentation characteristics, this study will be pivotal for future package design projects targeting nutrition education.

Research trials were conducted to evaluate the effects of different levels of dietary grain sorghum on broiler live performance, carcass yield and shank (leg) and breast skin coloring. Iso-caloric diets were formulated where sorghum replaced corn at rates of 0% (control), 20, 40, 60, 80 and 100% for a total of 6 diets. For each of the two trials, 1500 Cobb 500 male broiler chicks were randomly allocated to 60 pens with 25 birds per pen (10 pens/diet) and grown to 46 days for the first research trial and 41 days for the second. This dissertation examines the impact certain healthy lifestyle choices had on smoking behavior among college students who smoke cigarettes. Even with continued reduction in prevalence, cigarette smoking is still the leading cause of preventable death in America. With that in mind, it is important to continue to identify factors that relate to decreased tobacco usage. Secondary data from the American College Health Association's bi-yearly National College Health Assessment was used for this study.
