Human obesity has become a global phenomenon. The main goal of this study was to investigate the differences in food consumption and physical activity among high school age youth in two diverse geographical locations (urban and rural areas) and the relationship of some of the factors that may lead to overweight and obesity in Saudi Arabia. Background: Walking for exercise remains the most frequently reported leisure-time activity, likely because it is simple, inexpensive, and easily incorporated into most people's lifestyle. Pedometers are simple, convenient, and economical tools that can be used to quantify step-determined physical activity. Few studies have attempted to define the direct relationship between dynamic changes in pedometer-determined steps/day and changes in anthropometric and clinical outcomes. Native and naturalized bioactive plants of the Canadian and American temperate biome are examined for their health and performance enhancement properties. Some of these plants are now being used as natural health products, and many have a long history as traditional foods and/or medicines with indigenous groups. The purpose of this study was to determine the food behaviors of nutritionally high-risk seniors as a function of their racial background, gender, marital status, and education level. A total of 69 seniors were identified to be at high nutritional risk using the Nutrition Screening Initiative (NSI) checklist. A supplemental questionnaire (SQ) was created to examine the risk factors in relation to the participant’s demographic background. Key results indicated that Asians practiced healthy food behaviors and women were more likely to eat alone (p≤0.05). Married participants (90.9%) were most likely to consume 2 meals or more each day. School Food Environment The Frontline For Childhood Obesity Prevention: A Mixed-Method Study Of Nutritional Competencies And Skills Of School Nutriiton Professionals In Nebraska, Zainab Rida

The purpose of this statewide study was to address the nutrition knowledge, attitudes, and perceptions of school foodservice personnel in Nebraska regarding offering/serving healthy school meals. Moreover, this study identified some potential barriers and avenues of action for offering/serving healthy school meals. Data obtained from this study indicates that there is a strong correlation (r= .103, p r .237, p< .01) between the foodservice staff’s self-efficacy and their practices of offering/serving healthy school meals. Fortunately, the relationship between foodservice staff practices of offering/serving healthy school meals and their self-efficacy was positive and significantly predicted practices scores, β =.237, P< 0.01. The finding of the present study also identifies many barriers including lack of time and support that face the foodservice personnel in offering/serving healthy school meals. The findings suggested that there is an urgent need of a full school approach to promote and encourage healthy eating habits among students. Future research is needed to evaluate school wellness policies regarding healthy eating practices in schools. Moreover, establish partnerships with communities and universities for intervention that target students and their parents.

Objective To investigate the impact of fortification by comparing food records and selected biochemical indicators of nutritional status pre- and post-fortification.

Design Mean intake from 24 h recalls (n 142) was compared with the Estimated Average Requirement (EAR) to determine the proportion with inadequate intake. In a subsample (n 34), diet and serum retinol, folate, ferritin and Zn were compared pre- and post-fortification for fortified nutrients vitamin A, thiamin, riboflavin, niacin, folic acid, Fe and Zn.

This study explored the current medical nutrition therapy (MNT) provided to adult patients undergoing hematopoietic stem cell transplantation (HSCT) and examined the current and desired role of registered dietitians (RDs) in providing MNT. A total of 60 RDs (57% response rate) responded to an electronic questionnaire. Descriptive statistics and χ2 analyses (SPSS, version 18) were used. Results revealed the primary form of diet was oral, and for patients on nutrition support, parenteral nutrition (PN) was used more frequently (16%–31%) than enteral nutrition (EN) (5%–9%; P ≤ .05). This paper aims to demonstrate my independent study project internship at the Mullumbimby Community Garden (MCG), an interactive learning site for the citizens of Byron Shire. As an intern I spent 152.5 hours from October 29th to November 23rd planting, planning projects, attending meetings, and helping to educate about the importance of sustainable food production. More specifically, I focused on the development of the Children’s Garden, building vertical garden beds, planting the sensory garden, attending meetings, and helping to design and analyze costs for new structures to be implemented in the near future.

Health literacy has emerged as a focus of increasing research in the medical literature, yet it has received little attention in the nutrition literature. Because nutrition practice is an important sector of the health care environment and reduced health literacy confers known health consequences, dietitians should be equipped with an understanding of how health literacy extends to nutritional care. Identification instruments that are available fail to provide an understanding of nutrition literacy. Nutrition literacy may include knowledge of nutrition principles and nutrition skills. Additional research into the development of appropriate nutrition literacy tools and their application is needed.

In order to examine and obtain a better understanding of the local food system within Adams County, Pennsylvania, this study explores the characteristics and perspectives of the customers and vendors at the farmers markets in Gettysburg, Pennsylvania. The Mid-Day Meal Scheme (MDMS)—the world’s largest school lunch program—was launched by India’s central government in August 1995 with the lofty goals of “enhancing enrollment, retention, and attendance while simultaneously improving nutritional levels among children.”[1] 17 years later, particularly following prominent Supreme Court orders in November 2001 and April 2004, MDMS has become a key program for the government, now serving about 105 million primary and upper-primary schoolchildren in 1.2 million schools.[2] When implemented properly, MDMS has had a noticeable positive impact on student attendance and enrollment, alongside a reduction in teacher absenteeism. I studied the traditional wild protein collection techniques of the Naso people in the Syellick community Naso Territory, Bocas del Toro for 15 days during the end of November. The goal of this research was to record the various hunting techniques used by the Naso and determine whether those practices will disappear after the passing of this generation. I used informal and unstructured interviews as well as participant, objective, and passive observation (Master of Business Administration).

Data from Continuous Glucose Monitoring (CGM) systems may help improve overall daily glycemia; however, the accuracy of CGM during exercise remains questionable. The objective of this single group experimental study was to compare CGM-estimated values to venous plasma glucose (VPG) and capillary plasma glucose (CPG) during steady-state exercise. Twelve recreationally active females without diabetes (aged 21.8 ± 2.4 years), from Central Washington University completed the study. Background

Sirtuins are important regulators of glucose and fat metabolism, and sirtuin activation has been proposed as a therapeutic target for insulin resistance and diabetes. We have shown leucine to increase mitochondrial biogenesis and fat oxidation via Sirt1 dependent pathways. Resveratrol is a widely recognized activator of Sirt; however, the biologically-effective high concentrations used in cell and animal studies are generally impractical or difficult to achieve in humans. Accordingly, we sought to determine whether leucine would exhibit synergy with low levels of resveratrol on sirtuin-dependent outcomes in adipocytes and in diet-induced obese (DIO) mice.

By identifying the relationship between calcium location in the plant cell and nutrient bioavailability, the plant characteristics leading to maximal calcium absorption by humans can be identified. Knowledge of plant cellular and molecular targets controlling calcium location in plants is emerging. These insights should allow for better strategies for increasing the nutritional content of foods. In particular, the use of preparation-free elemental imaging technologies such as synchrotron X-ray fluorescence (SXRF) microscopy in plant biology may allow researchers to understand the relationship between subcellular location and nutrient bioavailability. An adult Rhinoceros Auklet (Cerorhinca monocerata) can only catch and carry a limited amount of prey to their nestlings after a foraging trip. The auklets therefore must maximize their efficiency by bringing back the most proportionally nutritious prey items to their nestlings.
