Hydrolyzing food by-products is a unique approach to potentially increase by-product value and reduce waste. An abundant by-product of cheese production, whey, contains all essential amino acids and some distinctive peptides with functional and nutraceutical properties. Typically, proteins from whey are tailored for specific uses by chemical or enzymatic hydrolysis; however, subcritical water hydrolysis is a novel alternative used successfully to hydrolyze various substrates. Nevertheless, minimal research exists on: (1) the hydrolysis of whey protein; (2) the incorporation of additives; (3) the hydrolysis of whole whey; and (4) the production of volatiles when using subcritical water hydrolysis.

Reliable density estimates of game and keystone species such as white-tailed deer (Odocoileus virginianus) are desirable to set proper management strategies and for evaluating those strategies over time. However, traditional methods for estimating white-tailed deer density have been inhibited by behavior, densely forested areas that can hamper observation (detection), and invalid techniques of estimating effective trapping area. We wanted to evaluate a noninvasive method of mark-recapture estimation using DNA extracted from fecal pellets as the individual marker and for gender determination, coupled with a spatial detection function to estimate density (Spatially Explicit Capture-Recapture, SECR). The Atlantic Forest of south-eastern Brazil is a hot-spot for biodiversity and should be conserved. It is also at the center of the largest municipalities in Brazil and therefore has a severely fragmented landscape. Iracambi, a working farm near the Serra do Brigadeiro state park in Minas Gerais, is working for conservation in an area of intense agricultural production and expanding forestry industry. Montana de Oro (MDO) is one of the largest state parks in California. Little is known however about its wildlife or their habits. Large predators such as mountain lion (Puma concolor) and black bear (Ursus americanus), and non–native species such as red fox (Vulpes vulpes) and feral pig (Sus scropha) are of management concern because of their potentially dramatic ecological roles. The Drowned Cayes area of Belize, Central America is regionally important for the conservation of Antillean manatees in the Caribbean (Lefebvre et al. 2001; Quintana-Rizzo & Reynolds 2008). These islands are increasingly threatened by human activities such as tourism, development and population growth. The objective of this dissertation is to evaluate manatee habitat use and status in this area. Invasive plants are a primary contributor to loss of biodiversity worldwide. In southern Minnesota, many wetlands have been invaded by reed canarygrass (Phalaris arundinacea). The current perception among ecologists and resource managers is that these wetlands are of little value to wildlife, yet little is known about the effects on birds of the widespread conversion of diverse wetlands to apparent monocultures of P. arundinacea. The purpose of this study was to determine the effects of P. arundinaceamediated changes in the wetland plant community on avian communities and nesting success. Analysis Of The Genetic Structure Of Bithynia Tentaculata Snail Populations In Wisconsin And Minnesota, Sarah J. Whalen

In recent years, there have been tens of thousands of waterfowl mortalities in Wisconsin and Minnesota. An invasive species of snail, Bithynia tentaculata, is a host for the trematode parasites (Cyathocotyle bushiensis and Sphaeridiotrema globulus) that have caused these deaths. A microsatellite-enriched genomic library was detected using DNA from a B. tentaculata specimen from Lake Onalaska (Pool 7 of the Upper Mississippi River). Seven polymorphic microsatellite loci were used to genotype snails collected from Lake Butte des Morts, Shawano Lake, and Lake Onalaska in Wisconsin, as well as Lake Winnibigoshish in Minnesota. The studies involved in this thesis expanded the current project being conducted in Dr. Newman’s laboratory that aimed to define and quantify the impacts of mercury movement in contaminated aquatic and terrestrial food webs in the South River watershed (Virginia, USA). This expansion involved a two phase study, which fulfilled the requirement of a master thesis.
Previous research in our lab documented mercury biomagnification in the river itself and two floodplain locations on the South River watershed. Predictive models were built for mercury concentration in members of these food webs. These studies reached a preliminary conclusion that mercury biomagnification in …
