Preventing Allergies In Infants: What Foods To Introduce And When, Annika Israelsen, Stacy Bevan, Mateja R. Savoie-Roskos
Preventing Allergies In Infants: What Foods To Introduce And When, Annika Israelsen, Stacy Bevan, Mateja R. Savoie-Roskos
All Current Publications
Food allergies have become increasingly common over the past several years among children in the United States (Comberiati et al., 2019; Sicherer et al., 2017). Food allergies are a negative immune response occurring in the body after eating a specific food (Sicherer et al., 2017). Unlike food intolerances, such as lactose intolerance which causes uncomfortable symptoms in the stomach and intestines, allergic reactions to food can cause a wide range of serious and sometimes fatal symptoms (Konek & Becker, 2020). Food allergies can affect a child’s health and quality of life, while also impacting their caregivers’ lives (Sicherer et al., …
The Female Athlete Triad In Adolescent Athletes, Elise Withers, Mateja R. Savoie-Roskos, Stacy Bevan, Katie N. Brown

All Current Publications
The number of teenage girls participating in sports has dramatically increased in the last few decades (Brown et al., 2017). With increased sports participation, the positive effects of physical activity have become obvious (Thein-Nissenbaum & Hammer, 2017). However, a set of health-related problems specific to female athletes, known as the female athlete triad (triad), has emerged. This fact sheet will cover what the triad is, why the triad occurs, and triad prevention and treatment.

Influence Of Chaperone-Like Activity Of Caseinomacropeptide On The Gelation Behaviour Of Whey Proteins At Ph 6.4 And 7.2, Sophie J. Gaspard, Prateek Sharma, Ciarán Fitzgerald, John T. Tobin, James A. O'Mahony, Alan L. Kelly, Andre Brodkorb

The effect of caseinomacropeptide (CMP) on the heat-induced denaturation and gelation of whey proteins (2.5–10%, w/v) at pH 6.4 and 7.2, at a whey protein:CMP ratio of 1:0.9 (w/w), was investigated using differential scanning calorimetry (DSC), oscillatory rheology (90 °C for 20 min) and confocal microscopy. Greater frequency-dependence in the presence of CMP suggested that the repulsive interactions between CMP and the whey proteins affected the network generated by the non-heated whey protein samples. At pH 6.4 or 7.2, CMP increased the temperature of denaturation of β-lactoglobulin by up to 3 °C and increased the gelation temperature by up to …

The solubility of carbon dioxide (CO2) in the moisture and protein components of cheese matrices and the influence of changing pH, salt and temperature levels remains unclear. In this study, model casein matrices were prepared, by renneting of micellar casein concentrate (MCC), with modulation of salt and pH levels by adding salt and glucono delta-lactone, respectively, to the MCC solutions prior to renneting. Different moisture-to-protein levels were achieved by freeze-drying, incubation of samples at different relative humidities, or by applying varying pressures during gel manufacture. The CO2 solubility of samples decreased linearly with both increasing temperature and salt-in-moisture content, whereas …

A cascade membrane filtration process including microfiltration (MF), ultrafiltration (UF) and reverse osmosis (RO) was used to fractionate skim milk into different streams. Significant quantities of lactose and minerals were removed to permeate after MF at 0.14 μm. Cheese milk, of similar casein content to the raw milk, was standardised simultaneously for casein, lactose, ash and total calcium from the membrane streams without requiring CaCl2 and lactose addition. Serum protein depleted cheese milk of typical casein content had similar rennet coagulability, cheese composition, texture and yield to the control; milk of 1.5 × casein content had a faster coagulation rate …
No More “Social Distancing” But Practice Physical Separation, Debasree Das Gupta, David W. S. Wong
No More “Social Distancing” But Practice Physical Separation, Debasree Das Gupta, David W. S. Wong

Though not a new term, “social distancing” exploded onto the global stage as an expression to publicize the only means currently available to control the transmission of COVID-19. This term is increasingly being adopted and translated into the vernacular to inform and guide public behavior in most, if not all, countries around the world. However, any effective global response requires direct and unambiguous communication and sharing of ideas across communities with different cultural backgrounds as well as between researchers and responders across the disciplinary spectrum. Unfortunately, social distancing is a misnomer. The current use of social distancing – separating ourselves …
Case Study: Effect Of Surgical Metal Implant On Single Frequency Bioelectrical Impedance Measures Of An Athlete, Dale R. Wagner
Case Study: Effect Of Surgical Metal Implant On Single Frequency Bioelectrical Impedance Measures Of An Athlete, Dale R. Wagner
Kinesiology and Health Science Faculty Publications
This case study examined the influence of a surgical metal implant on the bioelectrical impedance analysis (BIA) readings of an athlete. Single‐frequency BIA using a tetrapolar electrode configuration was applied to both the right and left sides of a 23‐year‐old female jumper who had an 8 × 345 mm titanium alloy nail implanted in her left tibia. The metal implant reduced BIA resistance and reactance on the implanted side by 27 and 6 ohms, respectively. This reduction in impedance resulted in a 0.4 kg–1.9 kg increase in the estimate of fat‐free mass (FFM) depending on the prediction formula used. There …
Structure And Stability Of W1/O/W2 Emulsions As Influenced By Wpc And Nacl In Inner Aqueous Phase, Vivek Prakash Wankhede, Prateek Sharma, Shaik Abdul Hussain, Ram Ran Bijoy Singh
Structure And Stability Of W1/O/W2 Emulsions As Influenced By Wpc And Nacl In Inner Aqueous Phase, Vivek Prakash Wankhede, Prateek Sharma, Shaik Abdul Hussain, Ram Ran Bijoy Singh
Nutrition, Dietetics, and Food Sciences Faculty Publications
Effect of WPC and NaCl in internal aqueous phase (W1) of W1/O/W2 type double emulsions was studied. Pre-emulsion and final emulsion were prepared using microfluidizer and Ultra-Turrax high shear mixer, respectively. The emulsions prepared using salt exhibited uniform droplet size distribution and structural integrity. WPC at 6% and NaCl at 2 or 4% levels demonstrated better sedimentation stability (> 99%) and encapsulation stability (> 95%) during preparation and storage of double emulsions. Samples without added NaCl showed poor emulsion stability and structural integrity. Higher level of WPC i.e. 8% resulted in poor stability and encapsulation efficiency of double emulsions at …

Forecasting Issues In Ncaa Division I Fbs Athletics, James T. Morton, Donna L. Pastore
Kinesiology and Health Science Faculty Publications
The National Collegiate Athletic Association (NCAA) and its member institutions have been faced with significant changes in the recent past. This study was used to predict issues, caused by some of these changes, which will impact leaders of NCAA Division I Football Bowl Subdivision (FBS) athletic departments over the next five to seven years. The Delphi technique was employed to obtain expert opinions for the forecast. The expert panel consisted of sport management faculty who were surveyed over three rounds to determine what issues were likely to occur and whether or not those issues would have a significant impact. The …
