Effects Of Red Light Intensity On Cultivation & Oxygen Production In Arthrospira Plantensis, Abigail Roberts Dec 2022

Effects Of Red Light Intensity On Cultivation & Oxygen Production In Arthrospira Plantensis, Abigail Roberts

Honors Theses

Maintaining life sustaining resources during long-term space travel has encouraged scientists to turn their attention to the potential benefits of a cyanobacteria named Arthrospira platensis, commonly known as Spirulina algae. This experiment measures the oxygen production and cell population growth of two structurally different Spirulina cultures under two different levels of red light intensities, 8 µmol/m 2Js (high); 3 µmol/m2/s (low). The cell population, oxygen produced, and oxygen produced per cell measurements were observed and recorded at three 24 hour intervals. It was found there was not a significant difference between high and low light intensities when considering the cell …

Alternative Sweeteners For Cultivating Water Kefir Grains, Morgan Barnes May 2022

Alternative Sweeteners For Cultivating Water Kefir Grains, Morgan Barnes

Honors Theses

Water kefir is traditionally fermented using dark brown sugar due to a fast growth rate, however the use of other sweeteners, such as honey, is relatively unexplored. This paper describes the investigation of using alternative mediums made with honey, agave nectar, Truvia/stevia, and monk fruit sweetener, each supplemented with dark brown sugar on the biomass growth of water kefir grains (WKGs). Growth in these alternative mediums was compared to WKG growth in the standard medium prepared using only dark brown sugar. Two trials were conducted, each with three replicates for each experimental medium as well as three replicates of dark …

Evaluation Of Artificial Sweeteners: Their Effects On Ice Cream Properties And Public Acceptance, Gwyneth Hadasa Apr 2022

Evaluation Of Artificial Sweeteners: Their Effects On Ice Cream Properties And Public Acceptance, Gwyneth Hadasa

Honors Theses

Background: The public is becoming more health conscious while sugar consumption, particularly frozen desserts, remains high. An evaluation of sugar alternatives that can maintain integrity of a product while providing fewer deleterious effects is necessary.

Objective: To assess the impacts of sugar alternatives on homemade vanilla ice cream while gathering information on a community’s opinion of the effects.

Method: Ice cream samples made with sugar (control), Sweet’N Low®, Equal®, Splenda®, Stevia®, and monk fruit sweeteners were prepared for a taste test. A sensory evaluation was conducted on March 31, 2022 at Ouachita Baptist University. Microsoft Excel® was utilized to conduct …

A Cookbook For The Trendy Chef, Katja Roberts Apr 2022

A Cookbook For The Trendy Chef, Katja Roberts

These trends were selected based on predictions made by the Institute of Food Technologists (IFT) and the Washington Post.

Influence Of Fertilizer Rate On Swollen Stem Formation (“Bulbing”) And Vitamin C Content In Different Kohlrabi Cultivars, Mark Iradukunda, Paul E. Read Mar 2022

Influence Of Fertilizer Rate On Swollen Stem Formation (“Bulbing”) And Vitamin C Content In Different Kohlrabi Cultivars, Mark Iradukunda, Paul E. Read

Honors Theses

Kohlrabi (Brassica oleracea Gongylodes Group) is a vegetable crop found in the Brassicaceae, and it is rich in antioxidants such as vitamin C. Vitamin C helps in oxidative damage repair and strengthens the immune system, so exploring vitamin C sources may contribute to improving human health. The objective of this study was to determine the effect of different fertilizer rates on kohlrabi yield, in terms of the swollen stem and the vitamin C content, and if those effects are similar in different kohlrabi cultivars. In this greenhouse study, we fertilized four potted kohlrabi cultivars with a common water-soluble greenhouse fertilizer …

Community Interventions To The Food Insecurity Crisis Inuit Currently Face In Nunangat, Alyssia R. Getschow Jan 2022

Community Interventions To The Food Insecurity Crisis Inuit Currently Face In Nunangat, Alyssia R. Getschow

Honors Theses

Inuit living in Nunangat, a northern territory in Canada, are facing unprecedented rates of food insecurity. The increasing impacts of anthropogenic climate change are rapidly changing the Arctic landscape in Nunangat, posing challenges to Inuit hunters who hunt and live completely self-sufficient off of the land. This lack of access to country foods and the impacts these conditions are having on Inuit communities are forcing Inuit to consider aid propositions from the Canadian government. Due to a long history of conflict with white settlers during the colonization of Canada, there is a feeling of distrust and cultural distaste between Canada …
