This project explores the pathways by which agriculture affects the environment and determines which foods have the greatest climate, water, and land impacts. Agricultural effects on the environment are extensive, from loss of habitat and declines in regional biodiversity to disruption of global nutrient cycles and climate change. Global food production accounts for 26-34% of annual anthropogenic greenhouse gas emissions, makes up 38-46% of habitable land, and is responsible for 70% of freshwater extraction. The original purpose of this study was to investigate differences in carbon footprints of school lunches by comparing a school in Arkansas, USA, and a school in Belize. Due to complications imposed by the COVID-19 pandemic, the purpose was revised to gathering preliminary data about the school lunch program at a school in Northwest Arkansas; data were to be used to estimate CO2-equivalent emissions for cafeteria energy use, meal ingredients from the two most popular meals served, and food transportation at the last point in the supply chain (food service delivery to school). The hop plant (Humulus L., Cannabaceae) is a dioecious, perennial, twining vine with a long history of human use. Nowadays, hop plants are generally grown for their inflorescences (“cones”), which are used in brewing for their phytochemical metabolites. Many of these metabolites are involved in plant stress response and communication. Genetics and environment are two major factors that affect plant metabolism. In three separate metabolomics studies, this project examined the effects of both genetic and environmental factors on hop phytochemistry.

Along with insects and lab-grown meat, for years seaweed has been lauded as a sustainable “food of the future” by the U.N. Food and Agricultural Organization. As the world increasingly turns to alternative foods in pursuit of a healthier Earth, seaweed has all the makings of an ecological savior. It’s plentiful — seaweeds and ocean algae make up roughly nine tenths of all the plant life on Earth — it’s cheap to harvest and get to market, packed with nutrition, and keeps oceans clean, absorbing more carbon dioxide and releasing more oxygen than the world’s rainforests.

Climate change and human activities are promoting the dominance of a photosynthetic family of aquatic bacteria, cyanobacteria. Blooms of cyanobacteria are not only a visual nuisance but can produce a variety of cyanotoxins than can harm the liver, skin, and nervous system of animals and humans. We analyzed lakes in the contiguous United States and found that between 2007 and 2012, the number of lakes that produced measurable quantities of cyanotoxins increased from 33% to 45%. Nitrogen and phosphorus pollution were the main drivers of cyanobacteria blooms and toxin production between these years. Many of these lakes and reservoirs are …

This paper proposes a return to the land and reconnection of spiritual practices through ethical teachings. Such a land ethic would involve answering the woes of industrial agriculture and providing a framework for farmers, consumers, and policymakers based on sustainable and spiritual considerations of the land. I analyze the loss of spiritual literacy and traditional ecological knowledge in the United States and discuss the spiritual history of agriculture in order to analyze contemporary religious perspectives on farming and agricultural ethics and thereby develop my own recommendations. Worsening climate changes effects are predicted to increase the severity and frequency of extreme weather events (EWE), which can disrupt food systems, from the local to global level, and compromise community food security. In the rural U.S., food insecurity, poverty, low economic growth, and population loss are prevalent, and rural communities often lack the physical capital to bolster community resiliency to climate change adaptation. In 2011, Tropical Storm Irene (TS Irene) in Vermont was the most damaging EWE the state’s history.
