Clare Miller spent her career first working for the Louisiana State Department of Education as an Area Supervisor before becoming the Food Service Director for the Diocese of Lafayette. She then went to work for the United States Department of Agriculture in Washington, DC, from where she retired.

Evaluation Of An Interactive Health Communication Trans Fat Website, Tara Banks

In order to evaluate the short-term educational and behavioral impact of the American Heart Association's "Face the Fats" web application had upon college students, a study involving 116 Utah State University undergraduate students was conducted. A one-group pre-posttest design was utilized to answer eight research questions focusing on: health risks associated with trans fat, general trans fat knowledge, ability to identify foods containing trans and saturated fats, food label information, healthy alternatives to trans fat, and readiness to change trans fat intake. Participants completed an online pretest survey and then viewed the "Face the Fats" website at their own pace. …

This study used a mixed-method to look at NCAA division I head softball coaches confidence, openness, and stigma tolerance about sport psychology principles and consultants, as well as what sport psychology principles, time of year used, and what a Sport Psychology Consultant (SPC) can do to help division I head softball coaches have more success with their teams. These variables were measured through the use of the Sport Psychology Attitudes - Revised Coaches instrument developed by Zakrajsek and Zizzi (2007). Emma Jo Williamson’s first job after college was in social work before making a career change and teaching Home Economics at Plaquemine High School in Iberville Parish for thirteen years. She then decided to go into school food service. She began her new career as an Assistant Director of the parish for two years before assuming the position of Director. Emma Jo is finally retired after twenty-seven years of serving the children of Iberville Parish.

She has been with the district for thirty-one years.

Mary Wroten, a native of Mississippi, worked in the East Baton Rouge Parish Child Nutrition Programs for twenty years. Among her many accomplishments while there was to greatly improve the procurement procedures for the district. Mary’s legacy will continue in Dietetics when her daughter graduates in the same field in May 2009.

Community-Based Inquiry Improves Critical Thinking In General Education Biology, Ian J. Quitadamo, Celia L. Faiola, James E. Johnson, Martha J. Kurtz

National stakeholders are becoming increasingly concerned about the inability of college graduates to think critically. Research shows that, while both faculty and students deem critical thinking essential, only a small fraction of graduates can demonstrate the thinking skills necessary for academic and professional success. Many faculty are considering nontraditional teaching methods that incorporate undergraduate research because they more closely align with the process of doing investigative science. This study compared a research-focused teaching method called community-based inquiry (CBI) with traditional lecture/laboratory in general education biology to discover which method would elicit greater gains in critical thinking. Multidimensional Self-Efficacy And Affect In Wheelchair Basketball Players, Jeffrey J. Martin

Kinesiology, Health and Sport Studies

In the current study, variables grounded in social cognitive theory with athletes with disabilities were examined. Performance, training, resiliency, and thought control self-efficacy, and positive (PA) and negative (NA) affect were examined with wheelchair basketball athletes (N = 79). Consistent with social cognitive theory, weak to strong significant relationships among the four types of self-efficacy (rs = .22–.78) and among self-efficacy and affect (rs = -.40–.29) were found. Basketball players who were efficacious in their ability to overcome training barriers were also confident in their basketball skills and efficacious in their ability to overcome ruminating distressing thoughts …

Background

The School Physical Activity and Nutrition (SPAN) questionnaire were developed as a surveillance instrument to measure physical activity, nutrition attitudes, and dietary and physical activity behaviors in children and adolescents. The SPAN questionnaire has 2 versions.

Objective

This study was conducted to evaluate the validity of food consumption items from the elementary school version of the SPAN questionnaire.

Design

Validity was assessed by comparing food items selected on the questionnaire with food items reported from a single 24-hour recall covering the same reference period.

Setting

5 elementary schools in Indiana.

Hispanics lag behind all other U.S. ethnic groups in education, and are especially poorly represented in science careers. Undergraduate research is an efficient method to attract undergraduate students to science, and many universities are taking advantage of this; however, much still needs to be done to fully explore its potential. In 2000, Texas A&M University-Kingsville, in collaboration with the University of Texas at Brownsville and the University of Texas Pan-American, initiated a undergraduate research internship program in citrus biotechnology to channel Hispanic undergraduate students into graduate education. Mattie Bradley was hired as the Food Service Director/Cafeteria Manager for the Weiner School District, Weiner, AR in 1996. She was a local restaurant owner who decided to sell her business and retire. When the local school district found itself in need of a Food Services Director, Ms. Mattie’s reputation as an excellent cook and manager got the attention of the school district and she was immediately offered the position.
