Effective and efficient chilling of beef carcasses will directly influence meat quality and consumer acceptance. Over the past century the United States’ meat industry has evolved, and spray chilling system have become common practice utilized by the beef industry. However, many of the chilling systems presently in use were designed to chill carcasses averaging lighter than the average beef hot carcass weight of today. Three studies were undertaken to examine strategies to mitigate environmental stress faced by Northern Plains cattle feeders. In the first study, 46 feedlot managers from SD (n = 21), MN (n = 6), and NE (n = 19) were surveyed on use and perceptions of heat stress (HS) mitigation strategies. All respondents avoided cattle handling during heat stress events and incorporated some method of HS mitigation. Buildings or shades were perceived as the most successful strategy (60.9%) and were most commonly named as strategies managers would like to employ (63% for shades and 17.4% for buildings). The United States beef industry has experienced increasing hot carcass weights (HCW) and improvements to quality grade the last three decades. Postmortem chilling of beef carcasses is critical to overall product quality. Carcass weight and composition may influence carcass temperatures during postmortem chilling. The objective of this research was to evaluate the effects of HCW and quality grade during postmortem chilling and on product quality. The overall objective of this dissertation was to determine the impact of selected post weaning management strategies on beef carcass characteristics and meat quality. The specific objectives were 1) determine the effect of a rumen-protected long chain fatty acids fed during finishing on live performance, serum fatty acid profile, carcass traits, and predicted carcass composition, and 2) determine effects of feeding brassica-based cover crops to cattle during backgrounding on live animal performance, carcass characteristics, tenderness, juiciness, and flavor of strip steaks, and case life of ground beef and strip steaks. Ultrasound technology provides cattle breeders a relatively quick, non-invasive, and economical way to gather carcass data on live animals. Ultrasound provides the means to accurately predict body composition and develop estimated breeding values; however, national cattle genetic evaluations assume homogenous additive genetic and residual variances. These assumptions may be violated when estimating genetic merit for carcass traits by ultrasound because of differences in variance due to scanning technician and image interpretation laboratory.
