Approximately 33% of the arable land around the world is vulnerable to drought, which is a very serious issue affecting the yield and productivity of cereal crops. Two contrasting rice (Oryza sativa L.) genotypes, HTT-138 (drought tolerant) and (HTT-39 droughtsensitive), under various levels of water treatments, i.e. control flooded (CF) as recommended for rice (control), control saturated (CS) 100% field capacity (FC), 80% FC, and 60% FC without or with foliar spray (100 mg L-1) of salicylic acid (SA) evaluated to enhance the yield for food security. In this research, the amounts of trans-resveratrol, (+)-catechin, (-)- epicatechin, and malvidin-3-glucoside which are among phenolic compounds as well as the total phenolic compound, total anthocyanin, and antioxidant capacity changes were examined in the Boğazkere (Vitis vinifera L.) grape, pomace before press, pomace after press and wine. In all parameters examined, a decrease was seen when proceeding from grape to wine, only (+)- catechin and (-)- epicatechin levels were detected to be higher in the prepress pomace. In this study, sweetened black and green tea were utilized as substrate for kombucha fermentation. Linden, lemon balm, sage, echinacea, mint, and cinnamon infusions were added to kombucha to design a novel beverage with improved functional and organoleptic characteristics. After fermentation, the antioxidant capacity (AC) of the kombucha increased by 13.96% 2,2-diphenyl-1- picryl-hydrazyl-hydrate (DPPH), 48.90% ferric reducing antioxidant power (FRAP), and 55.54% cupric reducing AC (CUPRAC). In this study, the effect of methyl jasmonate (MeJA) treatments (10-3 and 10-5 M) and two different storage locations such as Ankara and Taşköprü, on some quality parameters, such as weight loss, L* values, soluble solids content, firmness, titratable acidity, total phenolic content, antioxidant capacity, vitamin C and allicin content in garlic bulbs (Allium sativum cv. 'Taşköprü') were investigated during a storage period of six months with three replications (30 bulbs or 120 g cloves). Assessment Of Pretreatments On Drying Kinetics And Quality Characteristics Of Thin-Layer Dried Red Pepper, Bi̇ge İncedayi

In this study, the effect of pretreatments (hot water blanching, microwave blanching, and ohmic heating (OH)) on the drying kinetics and quality characteristics of red pepper, dried at 60 and 70 °C, was investigated. The drying times varied between 205-290 min, depending on the pretreatment and temperature applied. The drying rate also changed based on the pretreatment and the falling rate period was observed. Fitted to the experimental data were 4 mathematical models and the logarithmic model was found to be the best for all of the samples. Diversity Of Biochemical Content In Fruits Of Some Indigenous Mulberry Genotypes, Aytül Balik, Mustafa Kenan Geçer, Rafet Aslantaş

This research was carried out to assess the biochemical diversity of the fruits of mulberry genotypes grown in Muş Province in the eastern Anatolia region and to determine the genotypes available for breeding. Morphological and biochemical characteristics of 13 mulberry fruit genotypes, including 5 white (Morus alba) and 8 black (Morus nigra), were determined. Fruit antioxidant capacity was determined by Trolox equivalent antioxidant capacity assay. Fruit weight, pH, soluble solid content, titratable acidity, vitamin C, and antioxidant capacity were 1.38-3.77 g, 4.77-6.79, 14.33%-23.50%, 0.53%-2.20%, 4.47-35.83 mg 100 g-1, and 4.33-13.63 µmol Trolox equivalent g, respectively, indicating enough diversity among genotypes …

The Effects Of Genotype And Altitude Of The Growing Location On Physical, Chemical, And Phytochemical Properties Of Strawberry, Kazi̇m Gündüz, Hakan Özbay

The effects of genotype and altitude of the growing location on physical, chemical, and phytochemical properties of strawberry fruits were investigated. Eight strawberry genotypes obtained from diverse breeding programs were selected. The genotypes were grown at three altitudes: in Antakya (117 m), Urumu (443 m), and Saksak (755 m). The results indicated that genotype and growing location had a significant impact on both physico-chemical and phytochemical characteristics. Genotypes explained 36%?51% of total variance for fruit weight (FW), total soluble solids (TSS), total acidity (TA), color incidence chroma (C), hue (h°), citric acid, and total monomeric anthocyanin (TMA).
