The purpose of this study was to analyze tactics employed by coordinated programs in dietetics during COVID-19 and share best practices in the event that another crisis disrupts the intended learning plan and curriculum. The study was conducted via a survey that consisted of 14 questions, not including consent, that pertained to their specific program, whether COVID disrupted their supervised practice experiences, and if so, how they overcame the challenge. This observational research presents multi-year findings of a project using an online case study implemented in an undergraduate Medical Nutrition Therapy class that fostered interprofessional collaboration among students from various healthcare disciplines. The case study focused on a fictional patient with an ischemic stroke and all work was virtual. Students from various allied healthcare fields were represented: dietetics and nutrition, occupational therapy, speech-language pathology, and social work. Outcomes and Impact Quarterly

USU Extension Diabetes Cook Along classes provide diabetes education to the public while removing barriers to participation. These classes teach relevant topics through hands-on activities to increase participants’ ability to effectively self-manage their diabetes symptoms. Evaluation results show that participants experienced high satisfaction (86%) and substantial knowledge gain (92%) after the classes.

The number of small-scale and backyard operations has increased in the United States during the past decade, but there is currently a lack of outreach efforts and readily-available educational materials targeting these farming systems. We developed a webinar series on biosecurity to provide training for small-scale and backyard producers, and training tools that can be used by local veterinarians and extension educators to disseminate knowledge and consistent recommendations more effectively. Fewer people attended the webinars than registered, suggesting a gap between interest in biosecurity and commitment to the topic. Prior to the COVID-19 pandemic, occupational therapy students at one university received all orthosis fabrication education through an in-person laboratory-based environment supported by clinicians and instructional videos. Due to the pandemic restrictions, orthosis fabrication labs for occupational therapy students were transitioned to a hybrid in-person and at-home supported lab. Background: Given the extensive use of e-learning, especially during the COVID-19 pandemic, a validated instrument is deemed important for continuous evaluation. This study aimed to measure health profession education students’ satisfaction toward the e-learning process within all health sciences cluster (HSC) courses, following further validation of the satisfaction scale for the e-learning process.

Background: During the COVID-19 pandemic, a Bachelor of Science in Nursing (BSN) program transitioned from a traditional format to emergency remote teaching (ERT).

Purpose: The purpose of this study was to ascertain faculty and student perceptions about teaching and learning online.

Methods: A qualitative study was conducted with a set of four standard questions asked in focus groups about perceptions of online teaching and learning. Extended lockdowns during the COVID-19 pandemic mandated millions of students worldwide to e-learning and by default made many of their parents proxy homeschool teachers. Preliminary anecdotal, journalistic and qualitative evidence suggested that elementary school children and their parents were probably most vulnerable to this stressor and most likely to experience mental health problems because of it. We responded with a rapid review of 15 online surveys to estimate the magnitude of such risks and their predictors between 2020 and 2021. Purpose: There is limited evidence describing burnout among graduate health professions students, including pharmacy students, and there is a need for educational institutions to mitigate burnout and promote future healthcare provider wellness. Methods: A burnout prevention elective course was developed within an accelerated Doctor of Pharmacy program. Course faculty transitioned from live to fully remote instruction in April 2020. The modified course format combined discussion-based lectures, burnout self-assessments, reflective writing assignments, and applications-based presentations. Results: Twenty-one second-year pharmacy students completed the elective, and 13 completed post-course evaluations (61.9% response rate). Evaluations indicated substantial student support, with 92.3% “strongly agree” and …
