School Pantry Cook-Off: An Approach To Educate Youth On Food Insecurity, Siew Guan Lee, Gretchen Manker, Nav Ghimire, Laura Foist, Julie Buck
The Journal of Extension
The “School Pantry: Mystery Food Box Cook-Off” is a program designed to increase awareness of food insecurity among youth and teach strategies to prepare healthy foods on a budget. A pre-and-post survey showed a statistically significant difference in participants’ overall knowledge, skills, and confidence level after the program compared to before the program. Findings revealed a hands-on nutrition education strategy via cook-off could educate youth on food insecurity and increase their knowledge and confidence to make healthy and affordable meals at home. Other Extension educators seeking to address food insecurity and food preparation skills among youth can replicate this program.

Engaging Rural High School Youth In E-Cigarette Prevention And Advocacy, Melinda J. Ickes, Olivia Zidzik, Nathan L. Vanderford
Journal of Interprofessional Practice and Collaboration
Introduction: Recent national data reinforce over 3.6 million young people across the United States are currently using e-cigarettes, but little research exists on prevention and/or youth engagement strategies.

Methods: The study incorporated a one-group, post-test design. Participants were recruited from an existing student leadership program (N = 16) which provides advanced cancer education and training to high school students who are from Appalachian Kentucky who participated in an e-cigarette prevention and empowerment training in December 2019. Data …

This study aimed (1) to identify profiles in children based on actual motor competence (AMC), perceived motor competence (PMC), and organized sports participation (OSP), and (2) to examine differences among these profiles in weight status as well as autonomous motivation towards sports. Children’s (N = 206; 112 boys; Mage = 10.83 ± 0.92 years) AMC, PMC, OSP, weight status, and autonomous motivation towards sports were measured using validated assessment tools. Cluster analyses identified three profiles with completely convergent levels of AMC, PMC, and OSP and three profiles with partially convergent levels. Children in the convergent profiles with average to high …

Predicting Young Adults’ Intentions And Involvement In Alcohol-Influenced Aquatic Activity, Hannah L M Calverley, Lauren A. Petrass Ph.D., Jennifer D. Blitvich
International Journal of Aquatic Research and Education
Globally, alcohol consumption is a public health issue and a risk factor for drownings among young adults. While studies have identified a prominence of alcohol in youth drownings, little is known about the factors that influence young adults’ involvement in alcohol-influenced aquatic activity. The current study aimed to identify the predictors of young adults’ intention to participate, and past participation, in alcohol-influenced aquatic activity. A reliable and valid survey, informed by the Theory of Planned Behavior, was distributed to young adults (aged 18-24 years) educated in the UK and Australia. Cumulative odds ordinal logistic regressions with proportional odds were …
