Food literacy is an essential part of good physical and psychological health, however, food literacy is not a mandatory part of K-12 education in all schools. Many factors can influence food literacy levels including familial culture, socioeconomic status, and education levels. This research seeks to examine perceptions of food literacy in high school students and educators at two private American international schools located in Cairo, Egypt. Through the use of observations and interviews, the researcher used a qualitative approach to understand the self-perceptions of food literacy in students studying the American curriculum. Background: Assessing and addressing health literacy (HL) in patients is an essential role of the nurse and a critical component of nursing student education. Yet, large gaps exist within nursing school curricula with regard to the development of HL knowledge and skills, and the confidence to implement practices that target HL. Attitudes toward sexuality among Chinese youth have become more liberal in recent generations, but sex education remains controversial and limited. Due to the lack of awareness of sexual risks, many Chinese youth engage in unprotected sexual activities resulting in unintended pregnancy, abortions, and STIs. Therefore, understanding successful pathways and unique challenges are crucial to develop adequate sex education for youth’s sexual health in China. The current study used semi-structured in-depth interviews and investigated 28 Chinese youths’ experiences of sex education and sexual health. The purpose of this study was to evaluate athletic trainers’ current knowledge levels of health literacy and health literacy intervention techniques. This study was conducted using a mixed-method; non-experimental, descriptive research design which included a researcher-generated quantitative survey and 18 ethnographic interviews. Quantitative surveys were distributed electronically, via Survey Monkey, by the athletic training Board of Certification to 5453 certified athletic trainers from West Virginia, Kentucky, Maryland, Ohio, Pennsylvania, and Virginia.
