The increase in obesity rates in America’s youth could be a reflection of undernourished school lunches, a decrease in physical activity, and the lack of knowledge of health and nutrition. Children who come from a low-income family are more likely to be affected by these circumstances. School gardening may be a way of replacing those impacts. This senior capstone research project examines the benefits of school gardening on low-income elementary school students when implementing as part of the curriculum in schools.

In recent years, research has found that adolescents are experiencing stress at an astounding rate, even compared to adults. With a thorough review of the literature, it has been found that schools in the United States are experiencing an adolescent stress epidemic. Furthermore, students are experiencing stress in ways beyond an academic arena. With that being said, there seems to be a connection between stress leading to anxiety, as well as stress having a profound affect for students who have experienced traumatic experiences. There are limited studies that have investigated levels of hardiness in children. There is even less information on finding hardiness scales that have been normed on children in elementary school. The purpose of this study was to test the validity and reliability of the Hardiness Scale for Children (HSC), which assesses the three subscales of hardiness: Challenge, Control, and Commitment. 121 elementary school students (2nd-5th grade) were selected to complete the HSC. Their parents were also asked to complete a three-item scale to measure their child’s hardiness. The results indicated that older children tended to give themselves …

Increased levels of obesity, particularly among American youth, have consistently been cause for concern over the last few decades. Additionally, the amount of time youth spend being active throughout the day has consistently decreased. Physical activity levels among school-aged children in America are effected by any number of reasons, but this study points to the possibility of time spent being physically active during the school day having the greatest effect on a student’s overall level of physical activity. This thesis research focuses on the study of Waldorf education and how it benefits the whole child. It begins by looking at Rudolf Steiner’s Waldorf educational program and its foundational history and then takes an in depth look at the key elements of its rich philosophy and pedagogy. The literature review focuses on the key question, ‘Does this 100 year-old teaching philosophy encourage a more well-rounded and integrated educational experience than traditional public schools?’ The review highlights four broad topics in relationship to Waldorf education.
