This article explains how Community-Based Participatory Research (CBPR) can strengthen the design of digital nutrition tools by ensuring they are culturally relevant, accessible, and grounded in community needs. By engaging participants as equal partners, CBPR enhances trust, usability, and long-term impact. The approach aligns with EFNEP’s mission to deliver inclusive, community-driven nutrition education and provides a framework for developing sustainable, adaptable tools that reflect the lived experiences of the families Extension serves.

During the COVID-19 pandemic, Cooperative Extension professionals, like many others, were tasked with quickly adapting to accommodate limited face-to-face interactions. The pandemic necessitated that Extension educators leverage online resources to deliver tailored programming in informative and innovative ways while providing engaging, hands-on learning experiences. This article highlights two studies using Mentimeter as a tool to educate and engage Extension audiences through subsequent installments of an online book club. The presented case studies examine the processes and outcomes of a unique educational approach to Family and Consumer Sciences (FCS) in a non-traditional setting. Understanding The Impact Of Food Insecurity Among First-Generation College Students On The University Of Arkansas Campus, Madison Price, Jennie S. Popp Ph.D., Nathan Paul Kemper, Louise Michelle Hancox

The purpose of this study was to: 1) better understand food insecurity among first-generation college students and how it might differ from that of other college students, and 2) gather opinions from students that may serve as solutions to alleviate food insecurity. This study was conducted with a mixed-methods survey that included both open-ended and closed-ended questions. This survey had 670 responses. Nearly 10% of respondents stated that they were experiencing food insecurity. Almost 18% stated they were first-generation college students. A greater percentage of African American (P = 0.0022) and Hispanic Latino (P < 0.0001) students were first-generation compared to all other students, while a lower percentage (P < 0.0001) of Caucasian students were first-generation compared to other students. The results suggested that first-generation students were more likely to experience nine food insecurity impacts than non first-generation students. Further, both first-generation and non first-generation students indicated low levels of knowledge and/or use of existing resources on the University of Arkansas campus that can help address food insecurity needs. Finally, both first-generation and non first-generation respondents overwhelmingly favored food insecurity solutions centered around expanding access to campus food programs through lower costs and increased awareness of existing campus resources via improved advertising.

Lotic waterways are vital for habitat, food, water, and flood protection, but urbanization poses a major threat to their integrity. Runoff from urban surfaces leads to pollution, flashiness, loss of biodiversity, and other symptoms, also known as Urban Stream Syndrome (USS). Streams can be restored in order to combat USS, but most restorations are not monitored, so their long-term effectiveness is unknown. This study quantitatively evaluated a decade-old stream restoration in Fayetteville, Arkansas, to assess its effectiveness in combating USS and achieving set restoration goals, and to gain insights for future restoration projects. A major objective of the University of Arkansas System Division of Agriculture (UADA) Fruit Breeding program is to improve the texture of blackberry (Rubus subgenus Rubus Watson). Blackberry varieties with improved fruit firmness transport and store well and may maintain superior quality under challenging postharvest conditions than softer varieties. Increased firmness may also make cultivars less susceptible to red drupelet reversion (RDR), a postharvest disorder of blackberries in which fully black drupelets revert to red after harvest. Proposed regulations for alcohol advertising prevent beverage companies from targeting people under the legal drinking age. However, similar regulations for alcohol alternative beverages are less explored, which could allow alcohol alternative products to create awareness for alcoholic beverages among youth. Alcohol alternatives beverages, including no-alcohol and low-alcohol products, are increasing in popularity and can function as compliments to alcoholic products to decrease the total alcohol volume consumed or as substitutes for alcoholic products. Most studies investigating flipped learning fail to assess how student perceptions of flipped learning may change once the class is complete, and students have a chance to reflect on the experience. Follow-up studies are needed to evaluate the sustainability of the benefits from flipped learning among students and how they feel it prepares them, if at all, for future classes and/or their professional lives. This paper presents a creative research project that introduced musical instruments in an outdoor setting to infants and toddlers ages 0-to-3 years old. It was grounded in research suggesting that music plays a vital component in expanding development in the early childhood years, helping to promote learning across many domains. This project began with a survey distributed to 7 infant and toddler classroom educators, after which responses were analyzed for themes regarding perceived infant interests. Obesity affects adults in the United States, leading to chronic diseases and reduced well-being. Time-Restricted Feeding (TRF) is a type of dietary intervention lacking current data regarding the effectiveness on facets of well-being. This study’s objective was to determine the effect of time-restricted feeding supplemented with whey protein isolate on food intake, sleep, and mood in overweight or obese adults. Nineteen participants were randomly assigned to the control or experimental group: 1) control, TRF, and 2) experimental, TRF with whey protein supplementation. This study determined the effectiveness of rosemary extract on the shelf life of ground beef patties under different retail display conditions. Ground beef patties were produced from an 85%:15% blend (lean:fat). Patties were formed from batches of control or amended with rosemary extract. Patties were individually packaged using overwrap. Groups were assigned into one of two lighting groups (3000K and 3500K). Patties were placed in a simulated retail display for 5 d under continuous lighting and rotated once a day. Typical blackberries (Rubus subgenus Rubus) have perennial crowns and roots and biennial canes. The first-year canes (primocanes) are usually vegetative, while second-year canes (floricanes) produce fruit. Primocane-fruiting blackberries produce fruit on first-year canes and are desirable to growers because they potentially allow for a longer harvest season in temperate regions and enable production in tropical areas where no natural chill hours are accumulated. The development of molecular markers for desirable traits can potentially increase efficiency in blackberry breeding. However, to date, there are no diagnostic molecular markers for economically important traits in blackberries. Primocane-fruiting is recessively inherited, and tetraploid blackberries …

The purpose of this project was to help children reach more developmental goals and to make outdoor play at the Jean Tyson Child Development Study Center more inclusive for all children. Children gain many developmental goals from playing outside and being exposed to other environments as compared to just being inside the classroom. Outdoor play should be as inclusive as indoor play and offer many different activities and outlets, just as the indoor classroom does.
