Childhood obesity and food insecurity are problems within San Francisco, California. The purpose of this program analysis is to assess the Food Education Project (FEP), which is one of many projects addressing nutrition education and the long-term public health impact is to solve the problems of food insecurity and childhood obesity. Through primary data collection, students shared their honest feelings about food and were able to openly discuss what they know and do not know about food. Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet. Good nutrition is an important part of maintaining a healthy lifestyle. A balanced diet can promote positive health outcomes, protecting against health problems caused by nutritional deficiencies. Canada has reported poor diet quality and high rates of overweight and obesity among children. Obesity has been linked to several non-communicable diseases including type 2 diabetes, heart disease, and some forms of cancer. Efforts to improve lifelong, healthy eating behaviours must be implemented.

This dissertation investigated the impacts of school food programming on child nutrition. A Centrally Procured School Food Program (CPSFP) was implemented at 30 elementary schools in Southwestern Ontario, Canada. …

Nutrition education in school can provide students with the knowledge and skills to improve their eating behavior and overall health. This study aimed to evaluate the content of school wellness policies and understand teacher perspectives about teaching nutrition education at their schools in Jeddah, Saudi Arabia. In 2020, electronic surveys were used to evaluate the wellness policies in 11 elementary all-female government schools and teachers’ perspectives about the nutrition education offered in three elementary all-female government schools. The rate of overweight and obesity among adolescents aged 12-19 years has more than tripled since 1980, and disproportionately impacts low-income and marginalized populations. Reduction in adolescent obesity rates may result in decreased health risks, decrease healthcare costs, and increased quality of life. Effective intervention methods for adolescent participants have incorporated nutrition knowledge and culinary skill building into afterschool programs. This study examines whether building knowledge, skills, and confidence through a culinary intervention can improve adolescent participants’ choices of healthful foods through increased fruit and vegetable intake.

Behavior change is a process. College students routinely have poor eating habits during a time of life that can negatively impact health outcomes for the adult years. While knowledge of nutrition is essential to promote health and wellness, other components are required to change behavior. Specifically, nutrition education must be paired with behavior change skills or goal setting strategies in order for a change to occur.
