The Community Bridges Child & Adult Care Food Program is a non-profit organization that strives to provide yearly services to the tri-county residents of Santa Cruz County, Monterey County, and San Benito County. Amidst their service providence, the agency works diligently with daycare providers. A requirement for working daycare providers is to take annual training that incorporates new regulations from the United States Department of Agriculture (USDA).

The focus of this Capstone Project is on improving the equity issues affecting students' physical education and physical activity during COVID-19. Existing and newly developed equity issues have impacted students’ ability to connect with their remote physical education (P.E.), leading to decreased levels of physical activity. This is an important issue for students because their health and well-being are being negatively impacted by issues out of their control. The focus issue addressed in this Capstone Project is on improving the challenges faced by students with special needs through online modalities of adapted physical education (APE). This is an important issue for students with special needs because they are regressing because of online learning. This capstone paper examines the various factors influencing student engagement and academic performance as a result of the COVID-19 pandemic. This report addresses the following research questions: (1) "What might be the long-term effects of loss of engagement on children after the COVID-19 pandemic?
