The purpose of this course-based research project was to understand students’ perceptions and opinions about student food insecurity on the University of Denver campus, identifying challenges and opportunities for improvement, with the hope that the results will support the DU community’s efforts to prevent and address food insecurity on DU’s campus.

Students of color continuously persist at a lower rate than their white counterparts in higher education. Particularly for Latinx males, the number is lower than Latinx women. Universities have incorporated Diversity, Equity, and Inclusion (DEI) strategies to focus on their diverse student population and address issues of race, ethnicity, class, and gender. Despite these efforts, low retention rates for Latinx males persist. This study explores how Latinx male undergraduate students navigate a predominantly white institution as well as explore some of the challenges of DEI efforts at that institution. This project sought to understand what influences sustainability choices on the University of Denver campus. Universities and colleges play a pivotal and influential role in shaping sustainable future discourse in society. Archaeologists have developed different curricula and methods within museums, classrooms, and field settings that engage the public in learning about the past. One realm of public archaeology that has received little research is studying how intergenerational education impacts engaging learners of varying ages with the past. Community collaboration and place-based education (PBE) have served as relevant topics of research for intergenerational educators. This thesis is an exploration of the utilization of play, as a method for visitor engagement, within the context of the museum. Play, as a method for learning and engagement, is often a contested topic between scholars and practitioners within the museum field. Archaeologists have been attempting to establish stronger connections with communities for several decades. Concepts such as stewardship can be presented to a larger audience, and archaeology can be a valuable tool for public education. Public schools across the nation are struggling to improve with limited resources. Archaeology can provide teachers with inexpensive resources that improve student learning while simultaneously helping teachers meet more rigorous standards. Using historical, archaeological, and cultural resources from the World War II Japanese American internment camp, Amache, I created a new supplementary curriculum that focused on the experience of Japanese and Japanese Americans during that era. …
