The role of a Registered Dietitian (RD) in long-term care facilities (LTCF) is to maintain the nutritional status of their patients by building appropriate diets, advocating for the patient with their doctors, ensuring proper caloric intake, and providing patient education on the relationship between a healthy diet and a healthy lifestyle (2022, RD Nutrition Consultants, LLC). Baking Without Gluten: Maximizing Nutrition Without Compromising Appeal, Callie Dunkerson

The purpose of the current study was to determine the appropriate adjustments needed to transform an ordinary muffin recipe into gluten-free (GF) muffins made with flaxseed meal (FM). Two batches of muffins were made, but all-purpose flour was replaced with FM, rice flour (RF), and xanthan gum in the experimental recipe. Participants conducted a sensory evaluation on both muffins. The GF muffin tasted similar to the control (C) but did not align with the C texture. Austin State University’s (SFASU) were forced to move online out of concern for the health and safety of the faculty and students. Due to this fact, the modality of many courses was forced to change. The ASBMB curriculum for an undergraduate degree recommends a set of skills that can be acquired only through laboratory courses and research experience. Based on a previously reported purification scheme for BSA (Odunuga and Shazhko, 2013), we designed a robust, reproducible, cost-effective, safe and enquiry-based undergraduate biochemistry laboratory course that encompasses many of the skill-sets recommend-ed in the ASBMB curriculum. Our work not only modi-fied certain steps in the scheme, it also included addi-tional steps to enhance student learning and skill ac-quisition. Salt precipitation, ion exchange and size ex-clusion chromatography were employed by students to purify BSA from cow plasma. …

The original intent for this project was to see what summative information could be drawn using the FITNESSGRAM. Researchers wanted to relate the FITNESSGRAM to variables like academic performance, amount of physical education, and the student’s general idea of physical education. Over the past few years, researchers have found that students with a higher score on the FITNESSGRAM have a higher academic score on the T.A.K.S., better attendance, and less behavioral problems.
