Food Literacy promotes the way people should consciously think about the food we ingest on a day-to-day basis. This paper explores how teachers can positively teach students how to be literate when it comes to food and how students can apply these learnings towards their English subject matter skills. This paper also explores how children from all economic backgrounds seek out highly processed foods (such as fast food) which are filled with various chemicals and additives, which in turn, can affect students' performance within the classroom in an negative manner.

ADHD is one of the most common mental disorders of children in the United States. According to the CDC (2023), an estimated 9.8% (6 million) of kids ages 3-17 are diagnosed with ADHD. Because of the difficulties that are symptomatic of ADHD, students with the disorder often fall behind and struggle in school. Many of the symptoms deal with difficulties in executive functions. In this Capstone Project, the researcher examined educators' perspectives on math anxiety and investigated their personal experiences with math to identify effective approaches for reducing math anxiety. Addressing math anxiety is essential to reduce the tension and fear individuals experience in math-related situations due to environmental factors and teaching methods. The primary stakeholder perspective obtained for this study was that of educators, as they have the most significant influence on student's math comprehension and emotional associations with the subject. Many young kids have not yet developed social-emotional skills, which prevents them from controlling their feelings and emotions. When children do not learn to regulate their emotions, anger, frustration, and aggression issues are more likely to arise. However, when they do develop these skills, children can build self-awareness and confidence, increase empathy for others, and build positive relationships. Therefore, to support young children in developing self-regulation skills and dealing with feelings, I created a three-day lesson for teaching anger management skills to preschool children at Migrant Seasonal Head Start in Gonzales, California.

Early preschool curriculum often needs more attention to science. When the science curriculum is missing from the preschool curriculum, children may not recognize early science concepts, develop little interest in scientific concepts, and lack sufficient skills for kindergarten readiness. When preschool children are exposed to a science curriculum, they begin to apply scientific concepts, acquire scientific language, and develop scientific thinking. Therefore, to address the insufficiency of science in the preschool curriculum, I developed a three-day lesson for 3 to 5-year-olds at MCOE Early Learning Program at Creekside in Salinas, California.

Special Kids Connect (SKC) is a nonprofit organization serving children with disabilities and their families in Monterey County. This capstone project concentrated on the professionals working with children as part of SKC’s Early Start Intervention Program. The project’s objective was to discover local agencies' professional development training needs that serve Latinx families with disabled children between 2 to 8 years. Seventy-five child-care providers, early intervention service professionals, regional center staff, and school district personnel responded to the survey. Because of their inexperience, emerging adults often have a difficult time navigating healthy romantic relationships. For many, the skills necessary for quality relationships are usually learned through parents, friends, or mentors. Foster youth, in particular, may struggle more in developing and sustaining romantic relationships due to the lack of or inconsistent parental guidance or mentoring. To address this, I have created a two-hour lesson for emerging adult foster youth attending Hartnell College in Salinas, California. The content will be comprised of the characteristics of a healthy relationship, role-play scenarios, identifying unhealthy relationship behaviors, and how to use healthy relationship behaviors.

This Capstone Project focused on Social-Emotional Learning (SEL) to help manage behavioral problems that students may face. A class of 25 fourth-grade students attending a public K-5 school participated in this Capstone Project. SEL teachings were condensed into a four-week lesson plan which focused on various skills, catered to help this class’ specific deficits.
