Undergraduate research experiences (UREs), whether within the context of a mentor-mentee experience or a classroom framework, represent an excellent opportunity to expose students to the independent scholarship model. The high impact of undergraduate research has received recent attention in the context of STEM disciplines. Reflecting a 2017 survey of statistics faculty, this article examines the perceived benefits of UREs, as well as barriers to the incorporation of UREs, specifically within the field of statistics. Viewpoints of students, faculty mentors, and institutions are investigated. As statisticians, we engage in a variety of activities, some of which are regularly integrated into our undergraduate courses. However, the individual courses that comprise a mathematics or statistics degree program might not provide students with experiences in the broader range of activities that define the practice of statistics. To remedy this situation, faculty can consider developing and mentoring undergraduate research projects. This article briefly discusses the skills that comprise statistical practice along with some course and program options for helping students to develop these skills. We believe that students learn best, are actively engaged, and are genuinely interested when working on real-world problems. This can be done by giving students the opportunity to work collaboratively on projects that investigate authentic, familiar problems. This article shares one such project that was used in an introductory statistics course. We describe the steps taken to investigate why customers are charged more for iced coffee than hot coffee, which included collecting data and using descriptive and inferential statistical analysis. Service-learning projects are a useful method for students to learn both the practice and value of statistical methods. Effective service learning, however, depends on several factors and can be implemented according to a variety of models. In this article, different models for incorporating service-learning in statistics courses are presented along with example statistics courses. Principles for good service-learning practice will also be presented as a means for assessing the quality of a service-learning course component.
