Background: The Hispanic population is the largest growing minority ethnic group in the United States today. Minority groups have an added struggle with obesity and have higher rates of obesity in this country than the caucasian counterparts. While minority group parents want more for their children they face many cultural and language barriers related to proper nutrition and hydration. As post-secondary education becomes more important for the American citizen to generate wealth, universities are struggling to retain and graduate African-Americans, the third-most represented demographic in the country, especially at predominately white colleges and universities. The Colleges of Agriculture at these particular institutions are struggling to even get Black students to apply, let alone graduate. One of the major issues is the disconnect between the African-American community and the idea of post-secondary education in the agricultural field. Minorities and women continue to be underrepresented in science, technology, engineering, and mathematics (STEM) fields. In graduate education, factors such as racism, prejudice, discrimination, sexism, stereotypes, tokenism, and a lack of role models can all plague students and contribute to uncompleted degrees and non-entrance into STEM fields. One of the tools being used to combat these barriers is effective mentoring. Graduate students and their advisors generally have close working relationships and advisors serve in a tremendously important role in the development of the graduate student, so an effective mentoring relationship is vital.
