Previous studies have found that professionalism is an important success factor for chefs. Yet, research on what professionalism “means” to chefs, and how they “make sense” of it, is currently underexplored. While there is some evidence of the significance of the traditional chef’s uniform in professional identity formation, it also needs further consideration. Culinary arts lecturers and chefs have already contributed to these discussions, but the student voice remains largely unknown. Alongside this, there is no prior research specifically on professionalism in culinary arts in Ireland. Therefore, a research gap emerged, which this paper intends to address. Graphic novels and comics have a rich history and have long served as a medium for both education and entertainment. Although we live in an increasingly technology-rich era which offers abundant visual stimulation to compete with comics, graphic literature is arguably a more immediate and robust resource than ever before. The following paper highlights specific applications of graphic literature to pedagogical purposes, including implications for the use of comics in teaching history, world languages, English as a new language, science, and mathematics. This essay offers a set of strategies for utilizing the words of survivors and of witnesses to genocide in the classroom. Including the voices of survivors and victims in our classroom conversations about genocide, its impact, representation, and the possibilities for its prevention is crucial to an ethical and wholistic pedagogy of genocide. Discussion of these events in the classroom often finds us confronting questions from students about truth, historical accuracy, authenticity, and authority. This article is about an assignment I do in one of my Gender, Women, and Sexuality Studies social movement classes. I revised the assignment the first time teaching the class after Trump lost the 2020 election. For the assignment, students work in groups to research local feminist and gender justice organizations and deposit all of their original materials – recordings, photos, flyers, etc. – into a digital, open access archive I co-created several years ago with librarians and staff on my campus. This article offers a theoretically-grounded case study considering the role of Critical Media Project (CMP) as an educational initiative and intervention that sits at the juncture of media literacy and social justice. CMP fills key gaps in media literacy education by using a critical media literacy frame to foster critical consumption, critical creation, and cultural competencies around seven key social identities (race and ethnicity, gender, LGBTQ+, socio-economic class, religion, ability and age). In turn, through a media-rich website, curriculum and other programs, CMP helps youth imagine a better future with the requisite tools, resources and power to challenge dominant systems …

This essay responds to seven articles published in the same issue of the Journal of Global Catholicism on the use of Catholics & Cultures, a multimedia website, as a pedagogical resource for college classrooms. The site is deliberately presented in a fashion that undermines notions of center and periphery and presents Catholicism from a lay, lived-religion perspective as the multicultural faith that it is, minimizing reference to religious typologies. Particular attention is given to how to navigate tensions around theorizing, categorizing and sorting information for cross-cultural comparison. Reflecting on my experience teaching Introduction to Global Christianity, this essay ponders questions at the heart of undergraduate teaching: How can we encourage students to utilize online sources? How can we empower them to seek out answers to their questions? It offers practical examples of how I have used the Catholics & Cultures website in my classroom at a large public university. In particular, I reflect on my experience working with students who are mostly of Catholic heritage, but from many cultural and social contexts.

Teaching Sexuality On The Catholics & Cultures Website: A Refreshing Turn Toward The Longue Durée, Marc Roscoe Loustau

I present a close reading of the Catholics & Cultures (C&C) website’s treatment of sexuality-related issues and discuss this material in relation to debates about how to teach sexuality in religious studies and theology classrooms. The C&C website occasionally and intermittently uses a typical “contemporary issues” approach that considers sexuality in relation to legal and legislative decisions and government policies. In contrast, country profiles consistently situate sexuality in relation processes like nation building, urbanization, and lay Catholics’ growing authority. My interpretation highlights the site’s decision to emphasize the longue durée, long-term and deep structural processes driving cultural and religious changes. …

More than six decades after its publication, Horace Miner’s 1956 article “Body Ritual among the Nacirema” remains a reliable pedagogical tool, remarkably successful in helping students see their own ethnocentric biases. Catholics & Cultures has potential to do similar work. The site lacks some of what makes Miner’s text so effective, in particular its capacity to bring about a sudden shift in perception. The site also shares some of the article’s limitations, particularly in focusing on ritual to the relative exclusion of other aspects of religion. The dynamics of religious resurgence reveal the important ways that religious ritual and performance are meaning making spaces which are not self-contained or cut off from the rest of culture, but rather are a key locus of cultural change. Today’s undergraduate students are digital natives, shaped by constant access to information and countless experiences of encountering the world through the convenience of a screen. The ostensible comfort students have with difference gives way to a paradox, and one that’s made especially apparent in the theology classroom: Students are comfortable with seeing difference and particularity at a distance, but not adept at locating difference and particularity “at home.” I contend that Catholics & Cultures can help students from the dominant culture—namely, white students who comprise the vast majority of Catholic college students—destabilize their notion of the Catholic tradition as tightly …

Today’s classrooms often have a plethora of new ways of reading and writing entering the room, but too often these new ways of “doing” are disregarded and checked at the door. For this reason, one educator shares her journey through the mediated intersections of media, culture, and education. This essay attempts to address the dilemma of theory and praxis, what Freire referred to as “mere verbalism,” by examining one historical instance of critical pedagogy in history education. In a culture dominated by images, what is the capacity of radio-making to enact the ideals and meet the objectives of critical medial literacy education that empowers learners and expands democracy? This article conceptualizes a radio-based critical media literacy approach drawing upon a course project called “Borderless Radio,” where fifty-two students in a large urban Canadian university produced short radio programs narrating how they view and experience “multiculturalism.” Radio making in the classroom is soundscaping that politicizes intimacy, disrupts hegemonic discourses, and allows for teaching and learning to transgress; yet it also illuminates the ways in which self-positionality poses limitations …
